	Hi Guys, So there's a lively debate going on with some friends over on the Facebooks regarding a recent study that claims to to have shown that Non-Celiac Gluten Sensitivity doesn't actually exist. I see a lot of flaws in this study, and we've been bouncing back and forth the debate between scientific proof and "feeling" better. Anyway, here are links...

Another vote for Green's, it's supposed to be like a porter I think, though I found it was pretty light tasting (I've only had it once. The Glutenberg red ale if you can find it (It's made in Montreal but they're exporting to a lot of places in the US now) is also a darker beer and pretty tasty, though isn't what you'd call a stout/porter, just a darker red... -

I have Celiac Disease. My mother has it, my only sister has it, an aunt and uncle on my mom's side and another aunt and uncle on my dad's side has it. No, I have never been officially diagnosed. It's my staple pasta. I just ate some a few minutes ago for lunch. No gluten, no soy, non-GMO too. I also find it holds together better than most rice pastas. Reheats well too. -

I usually buy big bags of jasmine and basmati rice (if I only bough Lundberg I'd be broke pretty fast), and haven't had any issues with cross-contamination, but I do know that i can't eat too much at once. I always give it a good rinsing first, though Ironically enough, I have a lot of trouble with brown/whole grain rice. The fibre might make it healthier... -

Ditto on GottaSki. I tested negative on the antibody panel, but felt a million times better gluten free. Celiac runs on both sides of my family, so I've always considered myself as having it. If you feel better not eating most gluten, then you will likely feel a lot better not eating any at all. If you're seeing your doctor soon, then I'd talk to them about... -

"I can't eat that. It will make me sick" is more than enough of a response. Tuna should only be eaten on rare occasions anyway (mercury, over-fishing, etc etc). If you can handle any fish, salmon or trout or something is a better alternative. But that's beside the point. You know what you can/cannot eat, and being stuck in bed doesn't change any of that... -

If you want something more like a cream sauce, you can actually make a decent alfredo with coconut milk (with lots of garlic and some nutritional yeast). It does take more attention than throwing it in the pot, though. What about curry? You can make a big pot of biriyani, just cook up the veggies and curry and stuff, then add in pre-cooked basmati rice... -

If the only thing I had to worry about was gluten, I'd be quite happy. Instead, soy is the bane of my existence, dairy (while the least of my worries) is a no no, eggs make me all shaky, my gut just doesn't want to deal with things that should be good for me like quinoa and brown rice, or too much of anything at once, really. 	Oh man, I think I need one of those little guys. I hate having to use the microwave at work every day. If you hubby wants anything gluteny to eat in the first place, he should be the one making it and cleaning up, not you. Just sayin. Good luck with your gluten-free kitchen!

The only utencils that can be used for both gluten/gluten free is stainless steel, and nothing that has little bits where stuff can hide and not get cleaned properly. If you're using wood or any kind of plastic/silicone, they need to be dedicated gluten free. I love wood, but yeah, they don't have near as long a life as I'd like. Metal all the way for... -

In the future, if you're going on vacation and going to be staying in one place the whole time, it might be worth looking into accommodations with access to a kitchen, either a suite with a kitchen/ette or somewhere you can do your own cooking. Jealous. I have super fine hair, and while it doesn't come out in clumps, it definitely doesn't like to stay in my head. It's longer than it's been in ages, cause I let it grow (and now have to deal with more tangles), but thin (and thinning hair) is just part of my genetic inheritance. I found chickpea miso!! It was easier to find than the masa harina I took 2 weeks to hunt down. Turns out there's a local operation (Tradition Miso) in Ontario that makes organic miso, and makes a chickpea one as well. I had miso soup for breakfast this morning!
