Try adding a cup of chocolate chips to Betty Crocker or Bob's RedMill Chocolate Cake mixes...makes them taste homemade with sinful fudge frosting (2 cups choc chips, 1 can condensed milk, 1 tsp vanilla melted in saucepan). Yes, there are many gluten-free pastas - most made with rice or corn or combo of rice/corn. Some are quite expensive, but you can find them at affordable prices depending on where you live - Trader Joes, some Walmarts, Amazon are some of the less expensive places. Yes, there is gluten free bread. Udi's and Canyon Bakehouse are my family's go to breads... -

Been there....had several rounds of allergy tests over the years - both scratch and blood - all negative. Most recent round was insisted on by my allergist because I had such severe reactions to many foods on my elimination diet last August. Again all negative - doesn't mean I am tolerant of any of the foods I've removed. I still have to carry an epi pen... -

Although some Celiacs feel better within the first few weeks, many don't feel much better right away. Healing time depends on many factors. You will likely notice improvements with digestive issues first. Welcome! Yes, you definitely have Celiac Disease. Your tTG IgA is very high and tTG IgG is high leaving no doubt regarding diagnosis - the endoscopy may give you information about the damage in your small intestine, but is not always clear as the intestine is quite long and the area tested is quite small. McCormick's has a very good gluten policy. I don't think your paprika had gluten. You could be intolerant of a few different foods &/or groups of foods. It can be very difficult to pinpoint while trying to track it to one item. If I'm not mistaken I read another post from earlier this week that you had other flu like symptoms...can't remember... -

Welcome Will! I agree with everything GFinDC wrote. You should consider getting the blood tests done before going gluten-free. The reason for this is if it is positive, you will have your answer that you must be gluten-free for the rest of your life. You do need to continue eating gluten until the blood has been taken. Not to worry, with time you will learn to shop gluten-free at any grocery store. During the early days of the learning curve remember that Meat, Vegies, Fruit, Dairy (if you can tolerate) are all naturally gluten-free. Think perimeter of most grocery stores. After going gluten free I ate red, yellow and orange peppers nearly everyday - what easier way to add color? My easy lunch for the office was: Quinoa with tiny peas and bell pepper and tomato along with some peanuts to snack on.
