  1. Unfortunately both blood tests and endoscopy/biopsy require you to have gluten in your system. If you are looking for a Celiac Disease diagnosis, you will have to go back on gluten (some say a substantial amount of gluten for a period of at least three weeks...my Celiac Doc told me a month). Since you are gluten-free, perhaps you should stay that way...
  2. There is a kitchen appliance that has plastic bags that vacuum seal...but I like KarenG's idea of getting some fun duct tape -- Just put whatever meal in a ziplock and then put an extra seal of fun duct tape -- I've seen the patterns like zebra or cheetah or bright colors at craft stores as well as home improvement stores...the tape seems like the simplest...
  3. Yay!!! Love to see when Celiac/gluten-free info is shown correctly on TV ~ my Mom usually calls me and tells me to turn on the TV quick whenever she sees a Celiac reference
  4. You really need to talk to your youth group leaders -- are they aware of your dietary restrictions? If you were my daughter and we had already talked with the leaders and you still wanted to go on the trip - I would use a food sealer to seal your previously prepared meals -- seal broken -- don't eat it. This really is a clear case of bullying...I'd...
  5. Check with your GI doctor. Was the endoscopy specifically for Celiac Diagnosis? If not he may not have taken the proper samples. If it was specifically for Celiac -- did they draw any blood before the endo? My Celiac GI always takes blood the day of the endoscopy to verify that I am not accidentally ingesting gluten. I wouldn't go back on gluten if...
  6. It will get easier with time...those first few months I was close to tears in the grocery store and found it really hard to avoid the office treats. My office chair has a permanent sign on it -- just in case someone new hasn't got the word that microscopic amounts of food on their hands can make me quite ill. Says something like "If you touch...
  7. I'm with the foil pouch camp...and I carry a box of foil along with a few utensils in the car so that my kids can have fresh burgers if someone is grilling...all of our family and friends know that we are not being rude when we cook our own at their party -- took some training but even my co-workers know not to touch an unopened box of treats before I get...
  8. I second Bubba's Mom -- I misread your original post and thought you had already had an endoscopy. If there is a chance you will be considering having an endoscopy, do not stop eating gluten until after that is complete.
  9. Welcome! I hope you get answers from the mass blood draw...as others mention - if you have questions post the results here -- many can explain the results better than some medical personnel (especially primary docs and nurses -- even some GIs that don't specialize in Celiac can be less than helpful). Good luck to you on finding an answer to improve...
  10. I agree with others above -- completely remove gluten for a period of at least three months. Many have negative blood and/or endoscopy and improve when they remove gluten -- my kids and grands all did.
  11. Yep...all grains...I have the occasional small portion of brown rice as I don't have bad reaction...just feel a bit bloated. Below are entries from my food log....keep in mind EVERYONE has different reactions to different foods -- even my kids don't have the same reactions to these foods although they have similar intolerances. Tomato: Mouth felt numb...
  12. I just saw Sweetfudge's post when Pam.Jung bumped this thread back. My elimination diet was a combination of many as the information I found on these diets was conflicting in many cases. Generally it was a combination of elimination diets for autoimmune disease, possible allergens and lectin intolerance. Generally I eliminated all possible food allergen...
  13. Welcome -- It is very thoughtful of you to make your friend a gluten free meal. We use basically the same recipe as yours...for "chili seasoning" we use a combination of Chili powder, cayenne pepper, garlic powder (or fresh garlic). Just make sure the spices you use are gluten-free and the chili will be gluten free. Some other things that may make...
  14. Thanks! Already learned my something new for the day - well two things. Taro root on the shopping list Knew I shouldn't fry in olive oil -- but had no idea that we shouldn't cook with it at all -- seem to remember some rule about not taking it up too high in temperature, but guess I never checked actually what temperature that meant. I...
  15. Perhaps it is just our family...but when a restaurant really tries to have a gluten policy ffrom mgmt to server...we support them - even with an occasional cc or gltening - let them know what they are doing right -- and absolutely let them know when they slip - I have had many wonderful conversations with young servers that had first heard of gluten-free...
  16. roast chicken, boiled cabbage and grated parmesean cheese baked into chips + choc-choc chip ice cream cake with carmel topping!
  17. Even here in California -- I'm in san diego (sothern cali) plenty of plain (white/yellow flesh) sweet potatoes -- my daughter lives just north of the bay area - loads of sweet potato in a rainbow of colors - love the purple ones called "japanese sweet potato" where I purchased them.
  18. Try sweet potatoes, not yams - - they are not in the same family as russets, red and gold potatoes. We bake, mash, boil and roast them - great substitute!
  19. Early menopause was one of the hundreds of theories tossed about before I was diagnosed. Ruled out -- I think it was a hormone level test...ya that sounds right -- I'd have to look back at history for sure.
  20. Dairy is strange with me. Butter, Cream in many items I cook/bake = no reaction Cheese / Milk = can feel a bit bloated Yogurt = no way
  21. Hip Hip Hooray! Thanks for sharing
  22. Edited/removed my response to Maximoo...great topic for discussion -- discussion as well as support is what makes this forum is so great -- perhaps the commentary just sounded snarky to me and was not intended to read that way.
  23. "I'm pretty sure all In-N-Out does is peel their potatoes and toss them into the fryer." Yep...you can watch them create the fries in the kitchen while sitting in the drive thru -- haven't seen the peeling, but have seen the huge bag of potatoes in the back of the restaurant and the press machine that cuts the potatoes into fries. I've read a few...
  24. I can't eat there anymore because of other intolerances...BUT we have eaten there safely many times. Twice we had a problem. The first time both myself and my son were sick after eating...was a very long time ago so I'm not sure what caused...I think it was the fried rice. I emailed them to let them know specifically what happened at which branch. I also...
