  1. I started having a problem with all citrus a few years ago. I am hopeful that my intestines will heal and I will one day get citrus and citric acid back -- citric acid is in a lot of items.
  2. I can send you my food log that I started on August 10...it has a bunch of info about what I did and where to find more helpful info. PM me your email if you'd like me to email the file to you. PS>>>some of my smoothies were indeed very close to green bean, pear and cabbage...but I removed green beans too so more like spinach, pear, blueberry...
  3. Always ask for them to change gloves and you can ask for them to grab cheese from a fresh container - we have done for my son once we added cheese back into his diet.
  4. We have eaten at chipotle safely many times - cc'd once. After that we tried to stick to early lunch or dinner to avoid the rush. I can no longer eat there due to food intolerance other than gluten - but my celiac kids still love it! No experience with olive garden. I can add that since I lost more than gluten I now enjoy going to restaurants more...
  5. Good Morning- You sound very, very similar to me. All the items you mentioned along with pain in joints/muscles was me until I did a very strict elimination diet last August. I removed all grains, legumes, nightshades, dairy and citrus. Started with three days of green (vegie/fruit) smoothies and was out of bed by the third day and have improved since...
  6. That is a very good question. Sorry I can't help...just commiserate. Removing gluten improved my digestive symptoms, but not many other symptoms. My follow up endo at a year after 99.999999% gluten free showed worsening damage to my villi -- which was very confusing for me. Turns out I needed to remove quite a few other foods. That your villi completely...
  7. Oh my goodness...I missed this gem of a follow-up question earlier. I have been healing for three years and still have a very long way to go. Alice - IF you are one of the fortunate Celiacs that have improved health and healing with removing only gluten -- I suggest you thank your lucky stars. I in no way mean to diminish how tough it is to completely...
  8. I remember cleaning out kitchen when we went gluten-free. There are many that will tell you to toss many of the items you mentioned. But I was on a very tight budget so I scrubbed all cooking utensils, bakeware (including silicone baking cups to metal and glass pans of all sizes). After I scrubbed the items I ran them thru the pots and pans cycle of the...
  9. Chicken and Cheese Enchiladas Stuff rice tortillas with diced cooked chicken, grated cheese and fresh chopped spinach Sauce - a mixture of Cream and lots of Garlic, tsp salt and ground black pepper Top with cheese and green onions. Bake covered for 15 and uncovered for another 10 or until cheese is bubbly and starting to brown. Of...
  10. Real Vanilla Extract -- so much better tasting than artificial -- I just buy the largest store brand bottle to bring the per ounce cost down -- it make treats that taste just a lot better
  11. I am fortunate to have several chemist friends whom are among the top peptide scientists in the country -- in fact their help in explaining synthetic protein and peptide science in lay terms helped me solve the crazy puzzle that is my digestive system. Your comment is incredibly naive -- comparing incredibly complex chemistry of peptide based immunotherapy...
  12. Ravenwood's answer is spot on! Just wanted to second that answer along with send good wishes for continued health improvement. Give your husband time ... The gluten learning curve can be very tough for all. Perhaps as your health improves he'll realize the gluten connection. Good Luck to you.
  13. Good Morning- My holistic doctor told me that toxins have three ways to leave our bodies -- digestive track, skin and lungs. I've had skin issues when I've digested something I am intolerant of and while my body was in full detox mode. My son has had lung issues for the past ten years...misdiagnosed with Asthma, reflux, GERD -- didn't clear until his...
  14. Hello and Welcome! I don't have a great deal of time to post right now, but try not to lose heart when docs tell it is either stress, hormonal or depression. Trust your gut. If you can have a celiac blood panel run before you give up gluten. Your symptoms are very similar to mine and it took doctors along with me researching everything under the...
  15. Double drat...oh you already tripled the DRAT - with good reason...sorry you lost dairy again. I seem to be ok with some dairy (milk, cream, butter), but not cheese and yogurt - strange puzzles we are.
  16. The reason for re-trialing is the hope with healing of the digestive track your body will properly digest some of the foods for which you have developed an intolerance. It seems that those of us that went longer undiagnosed sometimes take longer to heal. Once the intestinal lining as a chance to heal and become less permeable so that our bodies can...
  17. Me as well -- that is exactly what I believe too...just found it strange that our little one had a few reactions having never had gluten in her system. They were to other grains so may be they were just hard for her to digest
  18. I'm with Skylark -- I know it is hard at first to lose any food, but when you focus on the fact that you eliminated one more food causing you health problems it really does get easier. I am much happier and healthier now that I know most of the foods causing me problems. Good Luck...oh and don't forget to trial Quinoa or other items you have adverse...
  19. I'm adopted so I don't know the up legs of the biological tree for me -- but I certainly do know Celiac is genetically linked. All three of my kids and two grands have Celiac or severe gluten intolerance. Two kids have other food intolerances -- not quite as severe as mine...but quantity of problem foods runs in direct correlation to age we removed gluten...
  20. I'm with the "trust your gut" camp and have walked a bit of the same path. My kids were tested when I was diagnosed - they were all negative - but all had varied symptoms that could be celiac. While on the fence of whether I should have them have endoscopies I had a genetic blood test run on me. I have double DQ2 genes which means all of my children carry...
  21. Love it - Awesome job Guys!
  22. Too many to count - all time favorite was Cheif of Rhuematolgy at a major teaching hospital telling me he highly doubted I had anything autoimmune going on. Stopped my from talking to docs for almost two years during which time I became so sick I almost kicked it.....always, always trust your gut and utilize docs for the info they are able to understand...
  23. Great idea but agree that it should incorporate the self dx'd along with the full spectrum of symptoms experienced by many that led to mis dianisis and or dismissal of possible dietary connection to lifelong non-specific symptoms. I think many of us could add to a fantastic script
  24. Switchfoot is one of my favorite bands - great music & message - not os.car worthy YET! Funny I had no idea there was a new muppet adventure until I watched the oscars - huge muppet fan here!
  25. Oops posting from cell and missed the question was from desp4health...nice to chat with you! Best, Lisa
