  2. I have known many, many celiacs that once they heal their intestinal damage begin reacting to other foods. You would fit that time frame since it takes 3-36 months to heal from the gluten damage depending on the severity and length of undiagnosis. It took me 3 months to start feeling better and at 2 years, I developed sensitivities to additional foods....
  3. Hi Evangeline. Actually many of the symptoms you listed, if not most of them, are standard celiac signals. I experienced them and so did my uncle, my daughter and my sister-in-law.   4. Yes, white sugar has no wheat, rye, oats or barley in it. It is just sugar cane. However, some less expensive brands of brown sugar might not be gluten-free. If a company uses molasses to turn cane sugar brown the cheap way, and if the molasses is also a cheap brand, it may contain barley malt. Stick with name brand brown sugar to stay safe. Also...

There are alot of gluten-free convenience foods: TV dinners, frozen pizzas, cookies, etc. Yes, they are more expensive than regular, but probably not a whole lot more than fast food.   12. Fresh sweet potatoes are gluten-free. No wheat, barley, rye or oats inside a sweet potato. They cook just like a regular potato. Baked in the microwave or oven.   20. In the U.S., caramel coloring is almost always made from corn. If it were to be made from wheat, wheat would have to be listed on the ingredient label since it is a "top 8".   25. If you can tolerate barley flour, then you are probably not celiac. From a non-medically tested observation, you are probably just allergic to wheat. If you were celiac, you would react equally to the proteins in wheat, barley and rye. The only way to tell for sure is to go back to eating all of it and be tested, via labs and endoscopy.
