OK, the verdict has been returned.... my coworker with all the chocolate?? She's on vacation this week. This chocoholic is going thru a bit of withdrawal...and guess what. No more itching. yes it is a transition! Instead of a frozen crust,I would try a mix. We tried a couple, a local brand, which was ok. Then we tried Namaste brand pizza crust mix. There are other brands too. as far as bread goes... never was big into anyways, so it didn't represent too much of a loss, initially. What I did miss right away was not having the convenience of making a sandwich for work, but I just packed other leftovers. It was pasta and pizza that was the big deal. Good news! I picked up a bag of Bob's Red Mill gluten free oatmeal.... and guess what..on the bag there were instructions for microwave preparation! So now I have my own ziplocked portions of "instant" oatmeal to take to work. yay!

I found your post interesting because oat meal had been one of my staple breadkfasts! I thought I could "get away with it" from time to time after going gluten-free this past summer. I am going to be the devil's advocate here and say that it is possible that diet and B12 supplementation may not be enough to provide total relief of your problems, and that some medication may still be required. I am no expert - all I can tell you is that my daughter had primary amennorhea. (along with issues of constipation) At almost 17 she was seen by an endocrinologist, and give hormones to start a period. The hormones totally messed her up...making a long story short she has been gluten free since July and has had two periods in a row, right on time. -
