ARCHIVED Namaste To The Rescue!
momxyz replied to momxyz's topic in Gluten-Free Recipes & Cooking Tips
ooh.... can I have your recipe for that carrot cake? I haven't seen their spice cake mix on any shelf yet, but your recipe would give me reason to hunt it down! -
ARCHIVED Namaste To The Rescue!
momxyz replied to momxyz's topic in Gluten-Free Recipes & Cooking Tips
thanks for the tips! I was actually looking for Pamelas at Whp;e foods but couldn't find it. I'll be ordering from the coop soon - hopefully they will have it! -
I really respect those of you out there who actually concoct their own flour blends and actually use xanthum gum in their baking! I am still new at all this, and as I am working at two jobs, I don't have time to experiment! So I need fool proof mixes that I can count on. My local health food store happens to stock several Namase products, so when my...

ARCHIVED How Immediate Is Adverse Reaction When Mistakenly "glutened"?
momxyz replied to KRP78's topic in Coping with Celiac Disease
unlike my daughter, my only presenting symptom was a rash that had all the hallmarks of DH. ( I never pursued an official DX, but the rash, which had persisted for months, has been resolving nicely since going gluten-free) I had a couple of "exposures" over the holidays. One was entirely accidental; the other.... well I admit I was pushing the envelope... -

Jason, I would focus on what you CAN DO, rather than what you can't. I have had to learn (the hard way) how to navigate business lunches at my work. For me it boils down to ordering things that are pretty much intrinsically gluten free from the get go. A piece of meat or fish (w/0 breading) Vegetables. Salad (sans croutons). This doesn't eliminate...

ARCHIVED Suggestions On Handling Family Holidays?
momxyz replied to waitingdorothea's topic in Coping with Celiac Disease
my advice on surviving the holidays: BE THE HOSTESS If its at all possible, have the family to dinner! I will admit, the family circle in my immediate geographical area (the ones more likely to show up) is pretty small so this is something pretty easy to volunteer for But it definitely made our first gluten-free Thanksgiving and Christmas (for... -
ARCHIVED How To Handle A Dinner Out With Friends
momxyz replied to PrincessKitty's topic in Coping with Celiac Disease
I have had a successful night out with friends to a place I didn't choose by doing two things. First, I studied the menu ahead of time. Lots of places post their menus online these days - as was the case for the place we went to. But if you can't find it on line - and the place is not too far away - it might be worth it to go there today or tomorrow... -
I want to put a good word in about this establishment! Ok, by reading on this forum I had pretty much crossed off Chinese restaurants as an option, due to the wheat content in soy sauce. At home, when we wanted to do take out, I had managed to steer my husband to a Thai place, where there were lots more gluten free options for me. Last month, we had...

ARCHIVED Thermoregulatory Improvements With gluten-free Diet?
momxyz replied to BigDogz's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Its funny, I had a very similiar conversation with a coworker just yesterday. She has been gluten free for many years, while I have only been about 4 1/2 months. She was asking me if my body temperature regulation was better - she had experienced improvement with this herself. My coworkers have always kidded me because I have always been cold, whatever... -
FYI - my "experiments" were fairly successful using Namaste flour mix as a direct 1:1 substitute for regular flour. I made my mother's gingerbread recipe and a batch of spritz cookies. The gingerbread men were great They are a little softer and spread out a bit more during baking, but the flavor is great. I think all the molasses and cloves and ginger...

hi everyone, it's been a while since I've posted.... I had the opportunity to take on a 2nd job... with 1 kid in college and another hoping to go next year and my husband being laid off last spring... you do what you have to do. Ironically, he got hired three days after I started my new gig and he wants me to quit. But for now I will keep plugging away...

ARCHIVED 2009 Thanksgiving Menus
momxyz replied to Ahorsesoul's topic in Gluten-Free Recipes & Cooking Tips
Dinner was a total success! We usually do one BIg bird - 20+ lbs - because we love leftovers. So this year we did two samll birds - 11 to 12 lbs apiece - one in the oven Grandmas way, one in the fryolater. TOTAL success! And we think we can do even better next year. For my mushroom/sausage sfuffing I made it per my usual recipe. For the bread... -
ARCHIVED 2009 Thanksgiving Menus
momxyz replied to Ahorsesoul's topic in Gluten-Free Recipes & Cooking Tips
we're having a "mixed menu". Grandma (my mother in law) who actually has been a huge support - she has bought just about all the Betty Crocker mixes that are gluten free because one of her great joys in life is cooking for us. she actually is on board with the benefits th gluten free diet has had for me and my daughter, and in addition to those baking... -
ARCHIVED Swine Flu Vaccinations
momxyz replied to momxyz's topic in Parents, Friends and Loved Ones of Celiacs
I appreciate your reply, because as a health care professional, I get to see the statistics, like the scenario you reported, first hand. Granted, the worsat case scenario is not every scenario.. but the risk does seem to be be uncomfortably elevated. If you have the opportunity to get the vaccine... do so! Yes, my daughter did have some side effects... -
I guess I would start by talking with your friend. And explain how much you'd like to come, but also that cross contamination is very real and not a trivial thing at all. Maybe you could ask him about the possibility of you talking to his mom in advance, to explain and ask permission to cook your own things in her kitchen.

ARCHIVED Help Please
momxyz replied to kwiehl's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I am glad your daughter is willing to give the diet a try. As you know, with teens, unless they buy into something like this, it's pretty hard to get them to comply... Ask your doctor for the name of the antibody test as well as the numerical result. Better yet, ask for a copy of the lab report. Each laboratory may have a slightly different defined... -
A month ago I went out with friends and I definitely did not want to draw atention or make a big deal! I didn't want to be different - I just wanted to have fun. I ended up studying their menu on line and contacting them a few days ahead of time. Basically I picked possible selections and reviewed these with the staff, to ensure all ingredients were gluten...

ARCHIVED Swine Flu Vaccinations
momxyz replied to momxyz's topic in Parents, Friends and Loved Ones of Celiacs
"I don't feel the H1N1 vaccine has been tested enough, but the virus can be very serious." Although the H1N1 novel virus has not been around for very long, the seasonal viruses have. The H1N1 vaccine has been prepared using the same materials and same methods as the seasonal vaccines - both the "mist" forms and the injectable form. Although the "swine... -

ARCHIVED gluten-free Thanksgiving
momxyz replied to itradehilton's topic in Parents, Friends and Loved Ones of Celiacs
We usually have Thanksgivng at our house, but my mother in law loves to cook for us and traditionally has made a good portion of the meal (including her stuffing.) We live less than five miles apart so this kind of coordination is very feasible. Since my daughtr and I went gluten free she has, up til now, been really great about stuff. Makes breaded... -
