  1. Yeah, when a result like that comes up, I tend to doubt it, too. The tests just aren't that accurate when it comes to predicting an allergy or food problem. As I understand it, elevated IgE indicates an allergy that gives the hives/anaphylactic reaction if it gets bad enough. A signficant number of people with elevated IgE to a certain food have elevated...
  2. Have you looked at coconut aminos? They are a soy-free soy sauce substitute. We found ours at Whole Foods, in the soy sauce section. Tastes about the same, cooks about the same. Slight difference, but workable. We made fried rice from this to pack cold, also stir-fried veggies in this and ate cold, too. does well with a little added for a spring rolls...
  3. I am so, so sorry your mom's doctor is such an ignorant prat. Is she willing to push him? Because at her age, it's even more crucial to be tested, actually. If you have celiac disease, the immune system is so overwhelmed with attacking itself that it doesn't have the resources to fight off illness like it should, AND the nutritional deficiencies don't give...
  4. 1. Popped whole grain sorghum with olive oil and salt 2. sweet potato fries 3. stevia and sorrel leaves 4. spoon of honey - to fight the sweets cravings! 5. pomagranates 6. homemade hummus wrapped with lettuce or spinach leaves 7. cucumbers with salt 8. spinach salad with herb flowers 9. stir-fried greens 10. roasted chickpeas
  5. I haven't noticed this, but I have to be super careful because I get so sick, so I don't think I HAVE had any major gluten cc, you know? However, one thing I remember reading about a few months back was a study where they swabbed a little gluten inside the check and checked for anti-bodies at certain intervals. Within a few minutes, celiacs were already...
  6. Let me make sure I understand right. You tested positive on the allergy test for: whole wheat wheat gliadin spelt egg and gluten Is that right? If that's the case, then yeah, you'll need to go gluten free, yeah. Re: your egg allergy, though - did they tell you if it was egg yolks or egg whites you reacted to, or both? That is actually...
  7. Yeah, they can, but usually not the ones that you would get from a group plan at work, at least. A Diagnosis of Celiac Disease will also make it impossible to be in the military. However, a diagnosis may be needed for special dispensations from the school, including college dorms. It can be needed for being allowed to carry special food on airplanes,...

    ARCHIVED Yeaaaa - Sharing.

I am so impressed that you figured it out by yourself! I have no idea how I would have had a clue without so many people who helped me out. Food for life has really zapped us in the past a few times, actually. There has been some trouble with them in the last few years listing things as gluten free when they actually used barley water in the processing...
  9. I totally agree with Psawyer - great analogy with the forest fire.
  10. So sorry you are feeling so sick and disheartened! A lot of us here can sympathize, i think - it's so, so upsetting when you are gluten free and that's just not cutting it. Hopefully some folks here could help you out. Could you give a list of a couple typical days' worth of food? Maybe there's something some of us might have heard of as an issue....
  11. Like was said, soap and water is your best bet. This is because it is not actually destroying the gluten, but rather washing it away. Sterilizing destroys living things, but since gluten isn't alive, it doesn't have the same effect, if that makes sense? To actually destroy gluten is really hard. Think of how high the heat is to bake bread, because that's...
  12. I'd probably call the company, but I think that cheaper in this case is often safer, LOL. I think I remember that some of the cheaper wines add oak chips to the wine instead of using oak barrels. shauna
  13. One problem with liquor - any liquor - is that it often falls into the category of 'processed in a facility that also processes wheat.' If a company is making any alcohol out of a gluten grain, distilled or not, then gluten is in the facility. That ups the cc risks. Also, one of the big issues with barley malt is that the test for gluten is less accurate...
  14. My son was small for his age, lots of anger/tantrum issues, bloated belly - and also a negative test, even though his sister and I both tested positive. I put him on a gluten free diet, and the results have been pretty dramatic, emotionally speaking, once I got him off of dairy AND gluten. But I'll be honest, I am frustrated and, frankly, pissed off at...
  15. You know, we've got a symptom now that I never realized WAS a symptom, but now I'm finding more people who have this as well: hyper-sensitive senses. Anyone else get this? Essentially, within about 24 hours, sounds are more irritating/loud. Certain people's high pitched voices make me want to yell at them. Taste can be off, where sour or bitter is a stronger...
  16. One thing we're trying now is we got corn to grow ourselves that is from heirloom sources (small ones) grown out in the desert, away from most of the corn fields, so they still seem to be okay. I'm hoping we can eat this all right once we get it grown! If you're interested, we got ours from a place called: Native Seed Search - you can find it online...
  17. I'd agree with the probable neuro issues causing leg weakness. Some celiacs' bodies make antibodies that not only attack the gut, but parts of the nervous system. It can cause numbness and tingling, problems with balance, weakness, and control of muscles, especially the limbs. You can look up the term 'gluten ataxia' for more information. Many neurologists...

    ARCHIVED Yeaaaa - Sharing.

Thanks for all the good wishes, guys! I'm still kind of smiling like an idiot, LOL. Not exactly. Yes to #1 and #3, but no to #2. I started the diet and felt worse than before I went gluten free. I found a few mild food allergies and avoided those, too. Some problems were eliminated with that, but I was getting increasingly worse neurological...
  19. I wrote to her to thank her for the article a while back, and she's a super-sensitive herself. Nice to have someone who understands so that others can get information other than 'it's all in your head,' you know? :-) shauna
  20. Re: the organic fruits/veggies - although not studied (to my knowledge) my GI has been noticing that a larger number of his celiac patients seem to react to preservatives, additives, pesticides, and genetically modified produce, so he's been recommending that all his celiac patients go organic. But again, this is his experience, not studied. Re: Facilities...
  21. I'm just sharing happy news for me. I've been gluten-free for 20 months now. I was diagnosed with blood tests and endoscopy, and then had another 'tummy check' a few months after going gluten-free. I had 'visible to the naked eye' damage the first time, and the GI was concerned because for round 2, I didn't look like I was healing. He thought we still...

    ARCHIVED Vitamins?

One thing that helped me eliminate many vitamins as a possibility was to change what I said when I called them. I used to just ask if they were gluten free. Now, I ask if they are gluten free, and then I ask if they test for gluten levels, and whether they test every batch, or periodically. About a third of the time I asked questions in this manner,...
  23. Do you ever have trouble with citrus/apples/pears, by any chance? I was floored when I found out that the wax coating used on these three uses either casein or soy in the wax to regulate the texture. shauna
  24. I know it was said before, but...yeah, this is pretty much absolutely true, best we can tell. - studies on how well cleaning works on machines in the food industry are not done for every type of protein, but rather for a generic 'best guess.' The only study I've found that was done to determine how well cleaning protocols work on our food processing machinery...
  25. Oh heck yeah. Best way to see how likely gluten cc would be to call them and ask the important question: do they test for gluten? If they don't, then they are in that lovely category of companies who label their products gluten free but should really say: we didn't add any gluten on purpose, for what it's worth. Most companies that are not solely gluten...
