Roasted butternut squash soup (no diary); chopped green salad with diced cucumbers, shallots, feta cheese, cherry tomatoes, lemon juice, & evoo; turkey meatballs (meat mixed with turmeric, grated onion, s&p); lentil-carrot-sweet potato-green pea curry (using the crockpot); and roasted sweet potato. Enough food for some lunches next week.
  2. Sauteed onions, ground turkey and peas on top of brown rice with broccoli and brussels sprouts. Also making tapioca pudding from scratch using the recipe on the Kraft Minute Tapioca box.
  3. How about fried rice and ham (sautee diced onions, diced ham, scramble an egg & add; add defrosted frozen green peas; mix in tamari sauce to taste). Garnish with green onions, if you like them. Or ham, egg, cheese mini-frittatas (in cupcake tins) and freeze. Rice pasta macaroni & cheese, add diced ham & peas.
  4. Both recipes look good. I was going to try a similar crockpot lamb (except with shanks) recipe but yours sounds better! Thanks for sharing.

  6. Potato and leek soup (used recipe from Mark Bittman's Vegetarian Cookbook); broiled turkey burgers with grated onion & tumeric; and steamed fresh green beans and carrots. Luckily, made enough soup for leftovers later this week.

We had green salad with feta cheese and dressed with plain lemon juice; homemade lentil soup (onions, carrots, brown lentils, chicken stock, too much pepper according to hubby); Trader Joe's gluten-free mac & cheese; steamed carrots, cauliflower, & zucchini; and homemade tapioca pudding made with honey instead of sugar.

  11. I have that cookbook and it really is amazing! Pumpkin muffins, brownies, & chicken pad thai are good too.
  12. We use Alba Botanica Coconut Milk Body Lotion and Sea Plus Renewal Cream with no reactions, at least so far.
  13. Whole Foods had organic canned pumpkin a couple months ago. It was the only place I could find it.
  14. Next time, ask for a manager. The manager at the Redondo Beach, Calif. location was very knowledgeable, friendly, and polite. He shared that they use rice flour when tossing their regular pizzas so there's not chance of air-borne cross-contamination. He also said they have a dedicated gluten-free area in their oven as well as dedicated gluten-free pans...
  15. I used to use So Delicious Coconut Milk but gave it up after having some slight reactions to it. I couldn't figure out what was in it that gave me a reaction. However, I do use the So Delicious Coconut Kefir (plain) sparingly every other day & don't seem to have a reaction to the kefir. Go figure. Never tried the Soy Free Earth Balance.
  16. How about mention that your tummy hasn't been feeling 100% lately (somewhat true, right?) so you're being mindful of what you're eating. Express alot enthusiasm for their thoughtfulness, consideration, & efforts and take home some of their goodies to enjoy later since your tummy is sensitive at the moment. What happens to those goodies later...whatever...
  17. True, microwaves can vary in power intensity. Ours is ancient, not quite one of the first but not too far removed. So, best to try it at 10 seconds & add more time if needed.
  18. Funny, I was just thinking the same thing about changing the amount of apple cider vinegar for the next attempt. And also adding water in a TBSP at a time to the suggested consistency. The texture inside this loaf was more similar to the store-bought than my earlier attempts. At least slicing it horizontally gave me 4 "slices" to use.

Here are couple ways I warm corn tortillas: 1) Microwave method: Dampen a paper towel (or 2), squeeze all the water out, place the tortilla in the middle & fold the extra over the top so the tortilla is completely enclosed in the damp paper towel.   20. Yes, the only water was for the meringue powder. 10 TBSP = 1/2 C. plus 2 TBPS water. At least volume-wise, it's a bit more than the largest amount of dried ingredient. So, on the label, it would be the first ingredient on the list. Hmm, I didn't let up double because I was aware that it might fall later. I thought it might rise when it was baking in...

Fourth or maybe fifth attempt results based on the above recipe but attempting to use meringue powder instead of dried egg whites with the following changes: 1/2 C Tapioca Flour/Starch 1/4 C + 1/2 Tbsp Rice Flour, brown 3 Tbsp Potato Starch (decreased to 2 1/2 TBSP because meringue powder has cornstarch as it's first ingredient) 1-1/2 Tbsp Vegetable...
