It is possible to not see the damage unti you are in your thirties or forties, but by then the damage has been done and can be massive. Why put your body through that if you know that you are intolerant? It is like someone who is at high risk of diabetes eating sugar out of the sugar jar at every meal just because it will be a few years before it happens... -

I had an afterthought...don't add too much flour or they will be more like biscuits than rolls. -
the buttermilk has acidophilus, etc. is the reason it works. You can also treat the intestinal stuff with capsules or tablets of it. We did that for an extended period of time to ensure that it did not have a chance to regrow.

celiac3270's comment on the flour also applies to the walls and cabinets. We finally wiped down all the cabinets and walls. You would not believe the flour dust that was everywhere! By the way, even diabetics can use certain honeys without much impact on their sugar levels. The ones that tend to be better for them are tupelo and sage. They are higher in a sugar called levulose and lower in sucrose. Levulose is assimilated more slowly by the body and can therefore be tolerated by diabetics as well as hypoglycemics. You have made a great choice. We use honey a lot around here. It sweetens well but with a little different taste. It may take some getting used to. If you use it to sweeten stuff like tea, remember that it will not last as long as white sugar because it is natural and spoils more easily. I finally gave up and outlawed gluten in our house. I kept getting sick because they weren't careful. My take on it was that they made the choice when they wouldn't be careful! -

It is very possible that your child has some additional allergies that are impacting him. It is also very possible that unless you are extremely diligent he is getting gluten from a source you have not previously considered such as soap or laundry detergent. Yes, Kaiti, you can have celiac disease without the DH but there are very few with DH who do not also have positive biopsies. I wonder if even those have false negatives. I know that if I get glutened, the skin outbreak will follow just after the gastro stuff. It tends to last longer, though...months off and on instead of days or weeks.
