  1. Most of have limited our grain consumption at least when we went gluten-free. Many have also limited or cut the dairy. I have never given consideration to totally cutting out these items as I see them as necessary sources of some vitamins and minerals. Totally eliminating them would leave you open to other problems unless you are extremely educated in matching...

  11. Mine is out of range as well and it is definitely my liver as a result of the celiac disease. The simplest way to determine if celiac disease is your problem is to have a celiac panel (blood work) done. It will tell you much.

  15. There's an elephant in the room here. We are talking about stem cell research. That means there will be a great deal of controversy if this is the way a "cure" comes about. I personally am hopeful that some of the other research provides an equally useful result without the moral issues involved with stem cells.

  17. The longer you are gluten-free, the more likely it will be that you will see "normality" in you gut and the other areas where you are affected. I have seen the muscle, nerve, and bone damage get much better over the last two years along with the gut.
  18. A lot of us have different allergies. Sometimes your immune system goes a little haywire and they will kick in. Think back...have you had any major stress recently or been ill with something else or got accidentally glutened? Any of those would trigger the immune system to overreact more than normal.

  21. It just dawned on me that we are talking about a child...watch for behavior changes even if there are no gastro symptoms.   22. Actually, I am not sure what is so special about that particular bag. I just know that they work better than anything else I have used over the years (I milled my own wheat and baked my own breads long before I knew I was celiac disease). My bread keeps better than when I use other bags. They are also great for use when giving away loaves to celiac disease...

  25. Any bread placed into a refrigerator will spoil or change textures quickly. I would suggest either leaving it out on the counter or freezing it per the instructions of the last post. I only make a small bread machine loaf so that it does not need to be frozen since I prefer it fresh. I just throw the ingredients inot the bread machine every other day or so...
