  1. Found the Carrot Souffle recipe. This one is from Paula Deen. Every year at my son's school Thaksgiving Dinner they have this. I almost hurt myself the first time I had it. It is so good. I have not tried this one gluten-free yet, I guess I will be soon. Ingredients 1 1/2 cups butter, plus more for baking dishes 3 pounds carrots, peeled and sliced Salt...
  2. One of the things I have made before was a 'sweet potato souffle'. I'm pretty sure you could make it with pumpkin. I don't really have a recipe, I just kind of wing it. I have never put flour in this, just made it up one day. 1 large can of yams or pumpkin 1 large egg 1/4 to 1/2 cup brown or white sugar (usually whatever I have) some melted butter-maybe...
  3. I found this on All Recipes.com. It was very good. I made mini quiche's in a mini muffin pan for a party. Yum! Crustless Quiche Ingredients 1 tablespoon vegetable oil 1 onion, chopped 1 (10 ounce) package frozen chopped spinach, thawed and drained 5 eggs, beaten 3 cups shredded Muenster cheese (I used shredded swiss) 1/4 teaspoon salt 1/8 teaspoon...
  4. A lot of people make gravy with corn starch. The Argo brand has a recipe on the container. I would use a good flavored broth to make gravy with it. It is very smooth. I don't think anyone would know that it is gluten-free or DF.
  5. Hi and welcome! You are not a hypochondriac. You know that you do not feel well. Hopefully you are getting the celiac panels done today. Most Dr.s don't know much about celiac disease so you can try to find one that does or if your Dr. would be willing to learn with you. Also get your vitamin levels checked. If they are low, that can make you feel bad too...
  6. Fish oil and b complex have helped me along with eating gluten free. I was on anti depressants on and off for many years and was able to taper off 3 mo. ago. I have always had terrible anxiety since high school, sweating, upset stomach and just a fear of the unknown. I don't have that anymore.
  7. Hey guys. My young adult daughter is having intestinal problems. She made me aware of this in the spring around the time she was getting married. She was having D with blood and pain.(she said it was not much blood) I did ask her at different times if it had cleared up, she would say it was. I didn't hear much else about it until she moved away and said she...
  8. Hi! Welcome! Ask any questions you need to. There are many smart people here.
  9. Hi! For my chili, my husband likes it a lot, I use chili powder, garlic powder, onion powder, ground cumin, ground oregano, paprika, cilantro flakes, ground(cayenne)red pepper (just little of this), salt and pepper. I don't measure, just add small amounts and taste. I use the same seasonings for tacos except I add a little cornstarch for thickening. Alton...
  10. Hi! Welcome. You should continue to eat gluten if you want an endo. I think your daughter for sure needs to have the endoscopy to rule in or out other problems. As soon as the endo is done you can go gluten free. Have you and your daughter had your vitamin levels checked? If not, you should do that too.
  11. The nurse is right about staying on your current diet until all testing is done. Even if your biopsy is negative, you can still trial the gluten free diet.
  12. Hi! I think I might get another Dr. Toddler's diarrhea is like IBS. The Dr. dosen't know why it is happening, so they label you with a 'symptom' as a diagnosis. Did the ped. run a celiac panel? Sounds to me you might be on to something if she is getting better gluten free.
  13. Hi! You can post your test results here and the more 'seasoned' members can help you. Also, you said you are having a colonoscopy(bottom side), are you also having an endoscopy(top side)? From what I understand, you need to have the endoscopy so they can do a biopsy of the small intestine. After you get all your testing done, you can start gluten free and...
  14. Welcome. My son would also have the 'embarassing symptom' but not as extreme as yours. His ped sent him for an x-ray and they saw that he was extremely constipated. He would still 'go' everyday, so that never crossed my mind. His GI doc said that there can be a blockage and some of the fecal matter will go around the blockage and can cause leakage. He took...
  15. Hi. Welcome. Sorry you are having a hard time. The gluten free replacements are going to be a little different. They have ingredients that you are not used to eating everyday. For snacks we have Lays classic, Kettle brand chips, Blue Diamond nut thins with pepperoni and cheese, marshmallows, freeze dried apple crisps, peanuts, cashews, jello, Cozy Shack pudding...
  16. Hi. Sorry to hear you little guy is having problems. There is A LOT of information on here. This lists some symptoms: https://www.celiac.com/articles/1106/1/Celiac-Disease-Symptoms/Page1.html Before you start the gluten free diet go and get blood tests done and a possible endoscopy with biopsy to see what is going on with his tummy.

  19. Hi. I'm not sure why the meds would be making you tired. Are you sure that all of them are gluten free?
  20. Hi! Welcome! No, you need to be consuming about 3 to 4 slices of regular bread a day for the tests but there is always the chance that the tests would be negative anyway. The blood tests are not 100%. If you have been checked for everything that could be wrong and you are feeling better gluten free, why not stay gluten free. I have heard of some docs giving...
  21. Mystery Diagnosis had an episode on not to long ago called 'troublesome child' and they found out the child had PANDAS. If I am not mistaken, I think he had strep in his brain.
  22. Hi and welcome! Yes, you need to ask for a complete celiac blood panel, vitamin levels. Critically anemic is a symptom of celiac and the iron may have caused him to be constipated. Arm yourself with some information about celiac symptoms and get the tests done. Understand that the tests can be negative but it can be a false negative. The celiac tests are...
  23. I don't know if it is for sure celiac related, but when I stopped eating gluten and started taking D, B-complex and fish oil, my D was very low so I had an Rx for that to start with, I have felt so much better. I had terrible foot pain for several months. I could barely stand or walk. Have you had your vitamin levels checked to see if you are low in any?...
  24. Yes, I go to whole foods every other week and buy two loaves of udi's sandwich bread and the past few times one of the loaves seems to be stale. At my store they are frozen so that is the last item I pick up before I leave. I carry a frozen item bag or a cooler so they will stay frozen until I get home. I just wonder if maybe they are some how getting re...
  25. If you go to AVON's website and choose the item you are interested in, they have 'larger image', 'ingredients list', 'wish list' under the item. Hope this helps.
