I bought a new gluten-free baking book and it has so many yummy-looking recipes in it, that I thought I'd take it out for a test-drive.   5. There's a very simple elimination diet that starts with lamb and pears. If you live in the US, these two items are rarely eaten, or at least more rare than say beef and apples.   9. I had bilateral peripheral neuropathy before going gluten free. (That's in fact why I went gluten free, hoping to make it better.) Neuropathy can be very painful, and can cause tingling in feet and hands as well. Ataxia can cause weakness in limbs.   10. Discussions like this about how meats are raised and processed is exactly why I was a vegetarian for so many years! Had to give it up because I was not very good at it. Could never get the right combos for the complete proteins, so added back fowl and fish. I just try not to think about how they're processed.

  15. I tried the Kinnickinnick english muffins about 2 months after going gluten-free and was sick shortly after. That was at a time when I was still making mistakes (yeah, like I don't make any mistakes NOW), so I don't know if it was the muffins or some stupid thing I did.   19. Udi's makes a frozen pizza crust that's soy-free, dairy-free and nut-free (who puts nuts in their crusts???). I haven't tried it yet, but I have one sitting in my freezer. I brought it home thinking I'd put some soy cheese on it, then found out I can't have soy. So it's still sitting in my freezer! Oh, well.... someday....

  21. Michelle~ If you are still interested in testing, do what mushroom suggested and take the enterolab test. If you are reacting to gluten, the test will pick it up even if you've been gluten light for a while. I was completely gluten free for about 3 months when I took their test and it was still positive. It's very sensitive. They can test anti-gliadin IgA...
  22. No, you're not overreacting. You're keeping your family safe and healthy. Since it's your sister-in-law and this will surely come up again in the future, maybe you could give her the cliff's notes version of what gluten intolerance is all about and the potential for severe neurological issues it holds for DQ1 families like yours.
  23. Wolicki, I totally agree with you about doctors -- I've had no luck with them either. But I've done as much as I can do without getting a doctor involved (I think). Raven & missy'smom - I will look into allergists in my area and try to find one knowledgeable about intolerances and elimination diets. Missy'smom, I've also ordered the book you suggested...
  24. Our story so far... After 5 months of being gluten free and taking some Enterolab tests, I now know I'm non-celiac gluten intolerant. I'm a double DQ1, which research has found to be super sensitive to gluten, with a side of neurological problems. I've got a positive dx for peripheral neuropathy.
