Testing is costly, and adds to the price of the product for every single customer, not just the 1% who really care. Most manufacturers do not test for this reason. The removal may be for legal reasons to avoid a possible exposure to legal action in the event of accidental contamination of an ingredient by a third-party supplier. I would not worry. -

Welcome! Yes, it is true that you need to continue on a diet with gluten until testing, including the endoscopy, is complete. I don't have any advice on mitigating the symptoms you are experiencing, but I am sure someone here will. -

To be honest, I think you are overreacting. Many of us can eat products from shared facilities and shared equipment without problems. If you EVER eat at a restaurant, know that the facility also has gluten, and everything is in the same dishwasher. I have been gluten-free for over 12 years. For a good number of those, my wife continued to eat gluten. So... -

I have been down this road three times. My directive to limit my diet was shorter at 36 hours. I was told to continue to take my oral meds as usual the day prior to the procedure, but to take none on the morning of the exam. My procedures were all at 8 am. Dextrose is a highly refined sugar and will be free of any detectable gluten regardless of the source. Nevertheless, in the US and Canada, if the source is wheat that fact will have to be disclosed on the label using the word "wheat." -

While they may keep better refrigerated, we store them in air-tight containers at room temperature. Be sure that they are truly air-tight. Tupperware and Oxo Good Grip are--Glad and Ziploc are not 100%. -

Welcome to the board! Two weeks off is not a mountain to climb. If she has noticeable symptoms, it is likely that there will not be complete healing in two weeks. That said, I would put her back on gluten for at least two to three weeks to undo any healing that may have taken place. -

It will take some time for all symptoms to go away, but a majority of us do see noticeable improvements within days. Some setbacks are to be expected. He may experience reactions even though he has eaten no gluten, due to the as-yet unhealed digestive system. -

I don't understand what you mean by hidden ingredients. The ingredient list will cover everything, although some vague terms are allowed. Wheat can not be hidden--it must be explicitly declared on the label as "wheat." You say you are newly gluten-free. If you have celiac disease, then your digestive tract will have been damaged. Part of the reason for it is regulatory. Labeling something gluten-free means that it is a distinguishing characteristic of that product compared to other similar products.
