  1. I'm not an expert in the blood tests. The ones developed ten to 15 years ago were not as specific as some available today. There is one (somebody will know which it is) which is highly specific for celiac disease. A positive there is 99% accurate.
  2. Welcome! Celiac disease has a genetic factor, but also requires a trigger to activate. An infectious disease can be the trigger, and mono has been cited by a number of members here over the years. Your symptoms are consistent with celiac disease, but could have other causes.

  6. It is an interesting tool, but I would not substitute it for actually reading the label. Products are reformulated all the time. The data in the app may be newer, or older, than the product you are considering. Read the label, after using the information as a starting point.
  7. I find Dr Oz frustrating when it comes to celiac disease. His doctorate gives him credibility with the masses, but he just doesn't grasp the realities of our situation.
  8. Regarding Glutinous Rice: in this context, glutinous means sticky (which is usually tied to sweet). Unless a foreign substance is added to it, rice is always inherently gluten-free. The human body is a very poor test for gluten, since there are so many other reasons why you might feel off after eating something.
  9. I, too, am in Ontario. OHIP will cover an endoscopy with biopsies, and pathological examination of the biopsies. Much more expensive than the blood panel. Go figure.
  10. Yes, it is normal. Grief or mourning is a normal reaction to the diagnosis. You will move through the stages. You seem to currently be at the anger stage. You will reach acceptance and recovery. It will take time.
  11. Sorry if I am missing something, but I don't see the problem here. Most ovens have two racks. Make sure that the gluten-free one is on the upper rack, so nothing from the other one can fall on it, and then cook both at the same time. You may need to allow an extra five minutes with both at the same time.

    If you have been gluten-free for three years, you should absolutely expect to test negative. The tests look for antibodies which your body produces in response to gluten. No gluten--no antibodies. The negative results confirm that your diet is, in fact, gluten-free.
  13. Welcome! Celiac disease damages your body. Going 100% gluten-free starts the healing process, but it takes time. How long will depend on the amount of damage and your age. The older you are, the longer it typically takes. During the healing process (and even after) you may need nutritional supplements. Twelve years in, I still take B12 supplements....
  14. I have never seen wheat flour or corn starch listed as an anti-caking agent. As Lisa said, Kraft use cellulose (gluten-free) as do many others. Some are just grated cheese--they can stick together. The whole idea of flour as an anti-stick agent is over the top. When moist, wheat flour acts as an adhesive. That is where all the envelope myths come from...
  15. Dr Oz is not someone that I take as a credible source on anything. I have not investigated this latest claim. Silent celiac disease is common. I wish silent Dr Oz was, too.

  17. Cane sugar is derived from sugarcane, which is closely related to maize (corn). They are species in the same tribe, Open Original Shared Link, the sorghum tribe. All the other tests you mention are covered by OHIP. If you have private insurance, they may pay for the tests that OHIP won't.   19. No, never. I have had accidents where I ate something by mistake (and paid a price), but I would never intentionally eat something that I knew contained gluten. I am into my thirteenth year gluten-free.

  25. Sadly, a common misconception. All of the gluten grains can be grown organically, and they will still contain gluten--albeit organic gluten. I think some people believe that gluten is something artificial added in processing.
