  1. Since Coffee Mate is gluten-free and lactose-free, can it be used to enrich Lactaid milk to be used in place of half-and-half in quiche or other dishes that normally call for it or evaporated milk? (I'm assuming the original is not flavored with vanilla or any other flavorings.)
  2. I had no idea what to make either so also had breakfast for dinner. Scrambled eggs, bacon, fried potatoes (from the leftover baked potato from last night). Worked for me. Clementines later.
  3. I shop at two local Wal-Mart supercenters, neither of which have a gluten-free aisle. I can buy Heartland gluten-free pasta, BC mixes (inc. gluten-free Bisquick), Chex cereals, Progresso soups, etc. And Amy's frozen foods (I don't go there!). Heck, they don't even carry Blue Diamond Nut Thins. So it must depend on the particular area you live. Even...
  4. They may taste better baked...hopefully! But that still doesn't mean you'll like them or use that flour again.
  5. I've never noticed that it tastes like fish but after the egg scare, I no longer taste raw dough. Does it taste too "beany"? If so, that's probably why you didn't like it. Did you bake the cookies and see how they taste? It's not my favorite flour and I really prefer to use separate flours and mix my own.
  6. I love this thread, too...and I'd like to come to some of your houses for dinner!!! Tonight I'm having a baked tilapia fillet, baked potato and spinach. Easy, peasy since I got the kitchen cleaned up after baking bread.
  7. Basic Sandwich Bread update: I made this bread today and it is good. It could use a bit more salt. I was surprised that the recipe didn't call for vinegar. But it did call for a tsp. of unflavored gelatin (I used Knox). I also used Bread Flour Mix B for those who have this cookbook. It rose well (yes, I was surprised) and I followed the directions...
  8. Pamela's rocks! ETA: I usually freeze it two slices to a cheap foldover sandwich bag and then put it into a larger ZipLoc freezer bag.
  9. I definitely found it more difficult to give up dairy than gluten although I do fine with Lactaid milk and use butter without a problem. I am craving a slice of Kraft Singles or a grilled cheese sandwich! Heck, maybe I should have one and I'd be half-way prepped for my upcoming colonoscopy in a couple of weeks.
  10. Well, I looked at the bread recipe and the two bread flour mixes don't even call for brown rice flour. Oh well, as long as I took it out of the fridge, I might as well grind it finer. I was thinking of adding a coffee grinder to my Christmas wish list but decided I wanted to buy my own so got one that holds a lot more than my regular Krups coffee...

  12. I have a beef chuck roast in my freezer and plan to use part of it for veggie-beef soup. It makes great soup! I'll have some of it as a roast (browned and then put in my crockpot) and then use a portion of the meat for soup by adding celery, onion, tomatoes and a bag of mixed frozen veggies. If need be, I'll add a box of Progresso beef broth. Most anything...
  13. Homemade veggie-beef soup pulled from my stash in the freezer. I also made banana bread and have already eaten 3 slices. Argh! I had planned to have that later tonight. Guess "later" will be a couple of clementines.
  14. That cookbook is on my kitchen counter right now...just waiting for me to make the Basic Sandwich Bread. I really should measure out the dry ingredients tonight. It makes it so much easier to get a head start tomorrow. I will definitely grind my brown rice flour again to see if I can get a really fine grind.
  15. I never use flour in my chili either. I like to make it in my crockpot and let it simmer away.
  16. Has anyone made the Pineapple Upside Down cake using Betty Crocker yellow cake mix? I made it but didn't care for it. My friends said they liked it. Personally I think they were being kind. I have two loaves of banana bread in the oven right now using Pamela's Baking & Pancake Mix. I've made it a number of times and know it will be good.
  17. The absolute last of the Thanksgiving leftovers! Ugh! I skipped the past two nights by eating other things and now I need to get these things out of my fridge.

    I think I'd keep a bag of Lundberg rice cakes and a jar of peanut butter (if you can have it) in my desk for emergency situations. Possibly also include individual servings of fruit or Jello or grab some fresh fruit from the fridge on your way out the door.

  21. I guess one of these days I may try it for pancakes although I do like gluten-free Bisquick and have some "from scratch" recipes I'd like to try. Before going gluten-free, I never did use pancake mixes as they are easy to make without mixes. Since I live alone, it's nice to have a stash of pancakes in the freezer to zap. Pamela's is incredibly good stuff...

    When my son was a teenager, I used to "hide" things in the veggie drawer of the fridge as I knew he'd never look there. Post-It notes also became my friend and I used to write, "Do Not Touch" labels on foods I didn't want him to help himself. He's now 39 and does eat his veggies...gotta thank my DIL for that and the good meals she prepares. I still...
  23. I'm having Tinkyada brown rice spaghetti-style pasta with doctored-up ready-made spaghetti sauce that I've had stashed in my freezer in single serving sizes. Yum! This time I'm trying the quick cook method for the pasta (cook 1 to 2 min., cover and let sit for 20 min. before serving). As you can tell, I'm being lazy today.

I'm not that familiar with the all-purpose gluten-free flour blends on the market (very few available in in area) so your best bet might be to experiment with an all-purpose blend of your own and if you find one that works well, then mix up a larger batch of it.   25. I am also fond of Betty Crocker gluten-free baking mixes. I've added additional mini-chocolate chips to the brownie mix. Yum. For my pumpkin dump cake (recipe posted in the recipe section) I used the Betty Crocker gluten-free yellow cake mix. Worked great. (I also subbed unsweetened coconut milk for the evaporated milk.)
