  3. I think I'd be tempted to make an almond crust and then use the recipe on the Libby's can for the pumpkin filling. Lots easier that way.   4. While it's not a pumpkin bread mix, Pamela's Products has a recipe for pumpkin bread on their website. It starts with Pamela's Baking & Pancake Mix, which makes it pretty simple to make.   5. I think it's a wise idea to make your home gluten free. I live alone and that was the first thing I did after being diagnosed. I won't be hosting Thanksgiving dinner but I don't want to take away from the rest of family traditions. We always have tons of food so no problem with me finding plenty to eat.   10. My local hospital (small town, USA) had to send my celiac blood panel to another lab to be processed and it took a bit longer than if it had been done in-house, like normal blood work. And yes, I was pretty impatient, too. Hope you get your results soon!!!
  11. Did you heat them in the microwave between damp paper towels? I tried that with Mission corn tortillas and I managed to get them to roll up to make enchiladas without too much problem.

  15. For what it's worth, Breyers does make lactose-free ice cream. I bought the vanilla (only flavor I could find) at Wal-Mart a couple of weeks or so ago. Surprisingly it's the same price as the other Breyers ice cream. I've been gluten free for 5 months now and have a single-serve size of Ben & Jerry's in the freezer that I'll try again one of these...
  16. I've had my share of bread baking problems, too. My first thoughts are that it may contain too much liquid. And it may need to bake longer. Sometimes I take it out of the pan and then put it back in sideways and bake for another 5 to 10 min. No guarantees that it works though. I like Earth Balance but haven't tried it for making bread.   17. I eat a lot of toast! I'm anxious to try some of Roben Ryberg's bread recipes that are in the cookbook I just got on Sat. Maybe, just maybe, I'll eventually find a recipe that stays fresh(er) after day one.

  20. That's interesting to know. I've never bought any non-dairy creamer since I drink black coffee. I did find Vance's DariFree at my local health food store the other day and bought it for when I need a dry milk.
  21. It wouldn't work for this recipe since it's a recipe for a "dry mix" to have on hand. Otherwise I would use Lactaid milk.
  22. I used country-style ribs, which are really meaty. I cut off as much visible fat as I can and then stick them in the oven to brown them, which also gets rid of more fat (I hate anything swimming in fat). I buy sauerkraut that comes in the 2-lb. bags in the meat dept. (no special brand). I do drain a bit of juice from them first and then layer the sauerkraut...

  24. I've only had a couple of Amy's...a pizza (overpriced and not worth it) and something with tortillas and black beans (yuck!). My tummy hurt after the tortilla thing (and that never happens to me). So for me it's simply not worth it. I find I'm better off keeping my own home-cooked stashed of leftovers in the freezer for those times I need something...
  25. Miles, your bread looks fantastic...makes me hungry right now! How do you feel this bread keeps? I've tried a few recipes that are great on day one (sandwich day) and are then sliced and put in the freezer in sandwich bags. They are never the same when defrosted and make terrible sandwiches. Toast or French toast usually redeem them so all is not lost...
