  1. I "almost" made this...but had purchased Italian sausage with peppers and onions at the deli in a local grocery store. One of the few things I know is safe that I pick up occasionally. Well, after diddling around replacing a string of lights on my Christmas tree, I finally ate at 8:30 with no pasta in sight and no desire to mess up my kitchen either. I...
  2. I'll make a note to NOT try it and tell my daughter the same thing (she has a teenager). Says it's the cake you'd expect at children's birthday parties. You should be able to swap out starches so doubt that should be a fatal mistake. While the guar gum/xanthan gum ratio might not be equal, it wouldn't be that far off and I doubt that caused the failure...
  3. I recently bought this book and have only tried one recipe from it and it was the sandwich bread. I liked it but then I don't mind millet flour. It rose exactly like I hoped and turned out well. But like all other breads I've tried, the next day it was toast. Toasted well, too, but since trying Udi's, everything gets compared with it. So I occasionally...
  4. Oh boy, Roda, I can relate! Must be the Gluten Free Kitchen disaster day. Last night I decided to make the chocolate cake on page 144 as I need to provide dessert for friends tomorrow. I was so careful to measure accurately, was not disrupted (that's caused some mistakes on my part in the past) and I ended up with an inedible mess. I questioned it when...
  5. I'm definitely keeping my follow-up appointment with my GI doc, which I made the day after I had my colonoscopy. Thanks again...you are a real asset to this forum!
  6. Thanks so much for the additional info! Yeah, it is kind of unnerving to have things like this pop up on a CT scan, especially when it's all a foreign language to me. The only problem I had prior to my celiac diagnosis was the big D...no pain, nausea, some weight loss but not terribly significant and I am still fatigued. I still have problems with...
  7. Thanks for your reply! FYI, this was an abdominal CT scan in late May. I previously had a positive celiac panel followed up with an EGD with a positive biopsy on April 9 at which time I went gluten-free. I've never had any abdominal surgeries. Specifically, this is from the official report, which my dr. referred to as a nodule. "A nonspecific 12 mm...
  8. For what it's worth, Whole Foods has taken over the Wild Oats stores...
  9. Tonight's dinner...smoked pork chops, cabbage, potatoes and carrots. Leftovers, too, which will reappear some time this weekend. And right now I'm eating a pear.
  10. What's the difference between a lesion on the liver and a nodule...or are they one and the same?
  11. I merely looked it up in a book I refer to a lot in order to answer the OP's question. Personally I've never seen a product with "wheat-derived maltodextrin".
  12. You are a total inspiration to all of us!!! So now that you're ready to graduate, what do you want to be when you grow up?
  13. YES!!! Actually I have printed out a lot of recipes, some of which are already in a 3-ring notebook. At the rate I'm going, I think I need to pick up a larger one. I bought dividers but, of course, haven't done a thing with them yet. That sounds like a good new year's project for the dead of winter. Sheesh, if feels like the dead of winter already here...
  14. Open Original Shared Link King Arthur's carefully tested blend of white rice and whole-grain (brown) rice flours, tapioca starch, and potato starch is perfect for all of your gluten-free baking recipes. 24-oz. box.
  15. Yes, glad it's over and done with. But in all reality, it wasn't as bad as feared. Your dinner sounds a lot better than mine!!!
  16. Dinner - Homemade chicken and rice soup, two slices of Udi's bread toasted and flourless peanut butter cookies. Maybe an apple or Clementine later. Lunch was the same except I had some Glutino pretzels to go with the soup. I had a colonoscopy this morning so am taking it easy on food today, which sure beats yesterday's liquid diet...and the colon prep...
  17. Didn't I read somewhere that the Cheesecake Factory now has a gluten-free menu?
  18. Does it also have a convection oven? And I do wish I had a center island in my kitchen. But I built this house before being diagnosed with celiac and I figured the kitchen I have would be more than adequate. Living alone with my family grown, I really didn't do a lot of baking but do a lot more cooking and baking now.
  19. From what I've learned, the biopsy would trump the blood test (however, I did have the blood test first and then the biopsy). And a number of people on this forum have had negative blood tests but positive biopsies. And some have been negative for both but still found eating gluten-free solved a lot of other problems for them. And some have just gone gluten...
  20. While I voted no, I have no idea if I have a problem with soy or not. I do still have some issues and am still trying to figure out how sensitive I might be to a lot of ingredients. But if given a choice among products, I would choose the one without soy just knowing it causes a lot of problems for many. For example, Earth Balance, which comes in both...
  21. You're welcome...and besides that book, which I highly recommend and find to be an invaluable resource, most everything else I know, I've learned right here! Great forum and a great place to get good answers on everything!!!
  22. The problem with Rice Krispies is malt, which is barley. If you live in the US, maltodextrin should be safe. And if wheat was used, it would have to say so on the label although it's such a highly processed ingredient that it would be gluten-free. To be sure, I just looked it up in Celiac Disease: A Hidden Epidemic by Dr. Peter Green, which is an excellent...
  23. WOW! If I had to go through what you do, I'd have voted difficult, too.
  24. I find the gluten-free diet to be relatively easy and I've only been at this for 8 months now. The most difficult was my first grocery shopping trip, which took forever, but I can maneuver the store without any problem now. If only manufacturer's labels would be easy to read...no red background with tiny black words. I've been cooking forever and...
  25. There is a Save-A-Lot store in a near-by town where I used to live but since I moved four years ago, I haven't been in there. It's certainly a bare bones store...nothing fancy. At that time (may still be true today ???), they always advertised bananas at 29 cents a lb. and generally had better overall prices on produce. And if you don't mind off-brands...
