  1. Lactaid tablets have never done anything for me. Just curious...what other supplements are available that might be more effective? I can tolerate Lactaid milk and Breyers lactose-free ice cream without a problem but then I really don't consume much of either one.

  5. I really don't know what to tell you. Do you think soy might be a problem for you? I can handle Lactaid milk without a problem, as well as butter (there's very little lactose in butter). I haven't done well with cheese except perhaps very small amounts of sharp cheddar or Parmesan. I'm dying for a grilled cheese sandwich using Kraft American Singles but...
  6. Yes, I think you're the ONLY one! And yes, my Udi's is frozen and is $5.99 for a 12 oz. loaf. My daughter lives in Denver and since that's where Udi's is located, she can get it fresh. Sheesh, if you cut the crusts off, there's nothing left!!!

A KitchenAid stand mixer was the best investment I ever made and I've been making my own bread ever...
  11. Yes, it gets better, thank God! I also tried a few others, including Udi's but here it comes in frozen and the crust is really dry. Since then I've been making my own but there is nothing as forgiving as wheat flour so we can forget anything we've ever learned. Gluten free bread baking is a whole new ballgame.
  12. You might want to give up dairy for now. I just tested dairy again and it does not like me. I made a creamy potato soup and had it twice in the past two days (Bear Creek Creamy Potato Soup) and felt bloated last night and the big D is back.   14. Ener-G Brown Rice Loaf! It was the first gluten-free bread I ever tried and I'll never forget it.

  16. Are you only lactose intolerant or do you react to both lactose and casein? If only lactose intolerant, Breyers makes lactose-free ice cream.
  17. Most of the recipes I've come across call for a combination of flours/starches for them to turn out. Even then I've had some failures. Baking with gluten free flours is tricky and I'm not at the point (yet at least) that I would try creating my own gluten free recipes from regular wheat-based recipes although I have occasionally subbed one flour for another...
  18. Personally I don't belive in "blood type diets". I am diagnosed with celiac through the celiac panel blood test followed by an endoscopy/biopsy (all positive) and I am an A negative. My newly diagnosed daughter is also A negative.

  21. The verdict is in! The pumpkin bread using Pamela's Baking & Pancake Mix is delish!!! Next time I'm going to double the recipe and make two loaves.
