I don't think it's that easy. It might work if only a small amount of flour is needed but to actually convert a recipe (i.e. a cake or cookie recipe, for example), it would be a crap shoot. Just about all gluten free baking recipes also call for xanthan gum, too, to try and replicate the properties and elasticity of wheat. Now if you're just thickening... -
Thanks for the explanation of lactose/casein and high/low lactose products! I'm still trying to figure out all of this for myself. I do buy Lactaid milk and yesterday picked up some Vance's DariFree to try a recipe for a "cream of whatever" soup mix since I don't feel ready to whip up a batch using regular dry milk. I bought some Food Lion (store brand) cherry pie filling about a month or so ago and there were no gluteny ingredients listed on the can. I don't normally buy pie filling so can't be much help. -

We've got to watch those boxes of Lipton onion soup. I just grabbed one at the store one day, which was in the dept. with all the other soups and it has autolyzed yeast extract (barley) in the ingredient list. The potato flour will be the most difficult to use up so I'd just keep it in the freezer. It's a heavy flour and makes a good thickener for a creamy potato soup. I'm still on my original bag of potato flour, which I bought a long while ago. I should dig out a yummy recipe for potato soup that I've had for a long while that calls for potatoes, broccoli... -

OK...I'm replying to my own posting. lol Yesterday I went to our small local health food store and found Vance's DariFree so bought it. I think I'll try making a batch of the "cream of whatever" soup mix only cutting the recipe in half to test it (that stuff is expensive!). Egg Bread Loaf...also found the recipe on food.com Open Original Shared Link I've tried this recipe twice and it was a success! Not as cheap as the Buttermilk Loaf as I paid $3.19 for 16 oz. of Chobani Greek Yogurt (the only plain yogurt Food Lion had on their shelves on Sat.) I think I used leftover white rice (Uncle Ben's) that I had cooked in my rice cooker and haven't had a problem with it being mushy...maybe because it's long grain rice and it didn't cook for very long in the soup. In fact I just pulled a serving out of the freezer for tonight to go with the loaf of bread I have in the oven. I usually have a stash...

Have you checked this thread? http://www.celiac.co...39&#entry637939 I'm sure some of those things could be frozen...or even partial meals could be frozen and then added to at mealtime. Soups (depending on the type) freeze well...like chicken-rice or veggie. Or if you have some favorite meals, make double or triple portions...

The Campbell's condensed version is what I miss the most as it was such a staple in my pantry. Progresso makes Creamy Mushroom (part of the Vegetable Classics line) but it's just not the same. You could probably make it work for some things but I'm missing my old Campbell's. -

As far as I know, Soft Soap is gluten free. At least I use it in both the kitchen and shower and haven't had a problem. Or are you talking about laundry soap/detergent? -

I have kind of a dumb question...do you take the pan of hot water out of the oven when you bake the bread or just leave it in? I have a very hard time trying to cool bread completely before I cut off a slice. -

Woo Hoo! Someone else who has this cookbook! I did make the Buttermilk Loaf and it's not bad although the second day it's toast. It seems like most breads I've tried are pretty good the first day (definitely sandwich day) and then the rest of the time I make toast...or French toast or I imagine it would make good garlic bread or a grilled cheese sandwich... -
