  1. I'd stay gluten-free until you have a diagnosis indicating otherwise. If, for example, you come back with a Crohn's diagnosis, you'll know that you need to go on the refined grains, no beans, and cooked fruit/veg regime for a few weeks to see if that helps. It's the "whole" wheat that's getting you more than the "wheat." If you don't get any findings...
  2. Butternut squash soup... then half an udi's bagel w/ PB and fig jam later in the morning.
  3. Frittatas are great one-dish meals that are good cold or hot.
  4. Deadlines are all in the Dec 15 to Jan 15 range. Still struggling a bit to figure out where I would fit well with faculty interests and the oh-too-rare funding for more social-based, non-molecular nutrition. There's not really a perfect solution, and the most enthusiastic prof I met in out West, but it'll be a serious move to leave the east coast. Great...
  5. Never tried it, but perhaps you could bake it in the oven instead?
  6. Not enough! Was supposed to teach a canning class tomorrow; fortunately, it was canceled as I'm beat and need the down time. So, far I've only done rather a lot of jars of lemon apricot sauce. Will hopefully do some spiced plums and pickled cauliflower... but this year is getting away from me. I have been playing with lactofermented veg, though. ...
  7. wow, must pop back in more often. just spent a few weeks pre-GRE studying (kicked that baby over the moon) and haven't been around. like, not cleaning or playing on internet except for cookbook marketing around. have been physically present, relearning geometry (I know! knew it when I was 14.) Didn't even use it much on the exam either. got all the stats...
  8. I freeze lentil soup and curried chickpeas with carrots like they are going out of fashion. Basically, any soup or stew that does not contain pasta or potatoes.

ARCHIVED Saw My New Pcp Today..

I'd take in some info from really classic medical sources: Mayo Clinic (search as a provider, rather than as a patient), Dr. Green's book on Celiac (try your local library), University of Chicago Celiac Center, etc. Flag the sections that mention relationships with other autoimmune diseases, make a list of your symptoms and concerns, and point out the common...
  10. "his system adjusting"?! Really, fat malabsorption is abnormal. A PCP should be able to order the blood tests, so it's probably feasible to feed some extra gluten for a few weeks then get the blood tests. If they're positive, you could consider it a diagnosis. If they're negative, you would have to decide whether to wait for a GI appointment or just...
  11. Leftover pasta and veg with tuna. 'twas quite good.
  12. I eat the dark chocolate hazelnut ones in very limited quantities, but have not contacted them. Typically, I don't react to foods made on shared facilities but there have been exceptions for a few things made on shared lines Mostly, I think I don't react because I don't eat much processed food.
  13. at 18w, the critical point for folate is past (not that you shouldn't fix any deficiencies, just that it's not incredibly time sensitive at this point). I would also recommend trying to talk someone into testing the infant after birth, or at least discussing whether supplementation might be helpful. Infants of mothers with depleted B12 are sometimes born...
  14. I actually do really well eating at one grandmother's house because she makes that classic steak and potatoes food that is pretty plain. Basically, I skip the dressing on the salad, the bread, and have ice cream for dessert instead of cake. It's not exciting, but there are always white or sweet potatoes at meals so I get carbs. Or make some good cornbread...
  15. There's a blog called Eat the Damn Cake that you should really pop over to and add a comment. She recently did a brief mention of orthorexia (a potential new "disorder" that has not been formally established). It's a little worrisome, but there are people who could probably use a diagnosis so they can receive some support. Okay, so my actual thoughts...
  16. I like make pumpkin or winter squash-based sauces. Very good with some carmelized onion, black pepper, and the aforementioned crispy sage. (Or just plain ol' dried sage, warmed up in some olive oil.)
  17. I was abroad, and had only been in Japan for a few weeks, so I was not only in a completely different time zone, but I understood very little of the language and thus news coverage. I do remember waking up for a toilet trip in the night and noticing that my host family had to TV on rather late, but I didn't go in to see why. Found on why the next day...
  18. Oh dear. That's not good. We're all going to have to carry letters from our doctors stating we have digestive issues and, given our medical disability, are legally required to be provided with restroom access. (Actually have friends with Crohn's who carries a little card stating that.) Edit: if it had been a woman, i'da bet they found a *gasp* dropped...
  19. College assigned combination of initials and numbers. Weirdly enough, it's stuck with me as a handy, never already-claimed username. (Shhh... don't tell anyone!)
  20. Mail order! Once you've tasted something, note your thoughts and then you can mail order the things you like in bulk.
  21. New York is relatively well educated about gluten, and if you emphasize "allergy" when they looked confused, you'll (probably) be fine. I also enjoy eating the prepared salads from the sort of "upscale" NYC supermarkets, and it's easy to find gluten-free breads, crackers, etc. The greenmarkets (farmer's market) are full of great fruit this time of year....
  22. Oh, I have to be really hungry to eat a Kind bar. They're too sticky for me, and weirdly between chewy and crunchy. I like Mrs. May's better for that sort of nut bar. Better flavor and texture. But, I'm a larabar fan. I quite like the lemon and cherry ones, as well as all the chocolate ones with chips. I don't really like the ones with heavy spicing...
  23. This is what I make: Gluten-free Cornbread 1/2 + 1/3 c fine cornmeal 1 c milk 1/3 c corn flour 1/3 c rice flour 1 T baking powder 2 T sugar 2 large eggs 4 T oil 1/2 c grated apple, yellow squash or zucchini 1. Place 1/2 c cornmeal in a small mixing bowl with the milk. Stir well and let soak. 2. Grease an 8 by 8 in pan. Preheat oven...
  24. This is copied and pasted from my blog, and the formatting lost the links and went weird, but there are a few new ideas: Nonperishable: 1. Nuts 2. Dried fruit or fruit bars 3. Whole grain crackers or brown rice cakes 4. Hot or cold whole grain cereal, like oatmeal 5. Packets of dried or canned fish (sardines, anyone?) 6. Popcorn, the plainer the...
  25. pizza topped with tuna and sauteed mushrooms w/ lots of garlic and herbs
