  3. Unconventional breakfasts are also fine. Leftovers, soup, salad, baked beans, eggs, homemade gluten-free cornbread... Whatever you're willing to eat. I like cream of buckwheat, usually with berries and nuts, maybe some sort of non-dairy dairy. (Dairy, it seems does not go down too well.) Cream of rice, nut butters on rice cakes, quesadillas, rice pudding...

  10. Half a pound of snow pea stir-fried with about 1/2 c brown rice, 1/2 an onion, 1 carrot, deep fried tofu, and clean out the peanut butter jar peanut sauce. Would have been brilliant EXCEPT I forgot the trim the ends off the snow peas. Ooops.

Sweet potatoes and winter squash (pumpkin, butternut squash) are also great carb sources and reasonably affordable and a little more nutritious than white potatoes if you're really counting your pennies and nutrients. As are frozen peas and corn. Cabbage a great wicked cheap vegetable (don't overcook it!!), and whole carrots tend to be reasonable too. ...

    Make sure that your iron storage (ferritin) levels are good, too. Often, doctors only check hematocrit and hemoglobin but there is sub-clinical iron deficiency that can increase your risk of injury.
