LOL. No, well... maybe? But, wait, should we trust you with the m&p? The garlic paste is an amazing base for dressings though. I don't have oen solid recipe, as they vary quite a lot depending on what I feel like and what I'm dressing, but this would be the base. 1 clove garlic 1/8 t salt a few grinds black pepper Pound in the mortar... -

Unconventional breakfasts are also fine. Leftovers, soup, salad, baked beans, eggs, homemade gluten-free cornbread... Whatever you're willing to eat. I like cream of buckwheat, usually with berries and nuts, maybe some sort of non-dairy dairy. (Dairy, it seems does not go down too well.) Cream of rice, nut butters on rice cakes, quesadillas, rice pudding... -
I also vaguely think that people who have more complicated health problems are more likely to hang out here longer. (I don't have them, but an avid interest in nutrition & health.) They definitely have learned more, and may be more likely to reply. I think a fair number of people join, figure it out, struggle, get used to life, and then only pop on...

There are a few reasons to do a biopsy: 1) confirming it is actually celiac (TTG and AGA can be elevated in Crohn's, possibly other IBD) 2) establishing a baseline assessment of damage (in case patient doesn't respond to treatment or later problems appear) 3) bureaucracy. schools, hospitals, insurance companies, tax folks may require a biopsy-confirmed... -

The first time I glutened myself was by tasting a piece of normal pasta. I was stirring the pot, thought it was done, and...tasted it. I've also kinda given up on sandwiches as I grew up on a very particular type of homemade, 1970s whole whole whole wheat bread. As an adult I leaned toward dark german rye breads. Half a pound of snow pea stir-fried with about 1/2 c brown rice, 1/2 an onion, 1 carrot, deep fried tofu, and clean out the peanut butter jar peanut sauce. Would have been brilliant EXCEPT I forgot the trim the ends off the snow peas. Ooops. -

I want strawberries! Quinoa pasta w/ a touch of pizza sauce, lots of spinach, a few stray bits of frozen yellow squash, black olives, fresh oregano, and pecorino romano Blueberries and cherries with a spoonful of sunbutter (pizza sauce = tomato sauce with so much garlic and herbs that you don't so much notice the tomatoes) -

I'm feeling you as I live in an attic. My recent kick has been assorted things tossed in to blanched (microwaved) collard green leaves. Collard Summer Rolls is what I've been calling them. Fillings so far: -egg & cooked rice (microwaved again to fully cook egg) -hummus and raw veggies -hummus and cooked rice and raw veggies -kidney beans... -

Sweet potatoes and winter squash (pumpkin, butternut squash) are also great carb sources and reasonably affordable and a little more nutritious than white potatoes if you're really counting your pennies and nutrients. As are frozen peas and corn. Cabbage a great wicked cheap vegetable (don't overcook it!!), and whole carrots tend to be reasonable too. ... -

And part two: I think that right now celiac disease is being diagnosed at the end-stage of the disease. That is equivalent to diagnosing breast cancer when it's already spread to the lymph nodes, bones, and liver. That's because the blood tests correlate to the status of flat intestines. Your biopsy may have still been negative, as stronger bloodwork... -

No. You can get everything you need from a gluten-free diet. However, those following a gluten-free diet tend to have lower intake of certain nutrients. If I remember correctly, it's vitamin D, calcium, folate, thiamin, fiber, and niacin. Options: vitamin D-- supplement or sunlight calcium-- fortified fake milk, actual milk, kale/collards, or a supplement... -

Have you ever tried a mortar and pestle? I use it often for salad dressing and it works beautifully. (Start with raw garlic and salt, and add herbs, then liquids and mustard.) -

Make sure that your iron storage (ferritin) levels are good, too. Often, doctors only check hematocrit and hemoglobin but there is sub-clinical iron deficiency that can increase your risk of injury.
