  1. Well, everybody's safe foods are going to be different. But mine are chicken, beef, carrot, sweet potato, apple, blueberry, and olives/olive oil. For seasonings I can handle sea salt, black pepper, thyme, cumin, garlic, onion. And now brown sugar, woot! I concur, having a safe list is priceless. Not knowing what foods are making you sick is enough...
  2. Well I went gluten free 16 months ago, and after that I just started reacting to so many foods. I eliminated one food after another after another, until I got down to the 7 safe foods I've been on. Reactions for me are typically bad joint pain, anxiety, my guts feel like they've turned into concrete, irritability, and/or left-sided chest pain. I have Celiac...
  3. So I've been down to 7 foods plus a handful of spices for 8 months now. Eight looooonnnng months. Early last summer, right after going gluten free, I developed a sun allergy, and would break out in hives if I spent more than 5 minutes in the sun with any skin exposed. Well my sun allergy seems to have disappeared just in the last 6 weeks! AND, I'm on...
  4. I really hope it's just long, drawn-out healing! One doctor did mention possible refractory, but then sent me off to another doctor, who sent me to the intestinal rehab program I'm with now. I've been gluten free for 15 months; prior to gluten free I only noticed constipation, achy body, and mild anxiety. I went gluten-free on a whim because of my kids...
  5. I take probiotics daily, have had an upper and lower endoscopy, barium study, gastric emptying scan, and 24-hr impedence study. All I got out of those tests was "you're probably a Celiac - you have various villous abnormalities". I had skin allergy testing a year ago, and it was very... unhelpful. Most of the 70 skinpricks turned red and puffy. The nurse...
  6. No, I've not been successful in ANY additions. I'm currently a patient at an intestinal rehab program - right now I'm waiting for allergy testing. After they determine if any of my reactions are IgE allergies, they'll develop a "treatment plan" for me. We'll see... (I'm very jaded; I've seen 8 doctors so far who have no idea what to do for me). Thanks...
  7. Hmmm, well all my vitamin & mineral levels are now perfect (many were quite low a year ago). But the sun allergy I developed after going gluten-free? Still there. Last weekend, after 30 minutes of gardening, I had red itchy bumps covering my arms... it took 2 days of hydrocortisone cream to calm it down. I too had hoped that my improved bloodwork...
  8. I take a probiotic daily and strictly adhere to my short list of safe foods. I feel really good, but I have had no relief as far as getting any foods back. That's still as bad as ever. Sorry!
  9. Also, anyone with an MSG sensitivity should use extreme caution when trying the often-recommended L-glutamine supplements to support gut healing. It is easily converted in the body (essentially to pure MSG). I learned this the [very] hard way after taking 2,000 mg of this stuff on the recommendation of my dr. I'd never been so sick or so scared - I thought...
  10. No prob! I can safely eat: chicken, beef, sweet potatoes, carrots, apples, blueberries, and olives/olive oil. For spices I can handle sea salt, black pepper, garlic and sage.
  11. It'd been 8 months since I've tasted chocolate. I last tried Enjoy Life choc. chips and it wasn't good. But yesterday I was hungry and hormonal and saw that bag and thought what the heck, it's re-trial time! I ate 1/2 ounce and waited a few hours and was fine. So then I went a little crazy (I've been on an extremely limited diet for almost a year, you...
  12. I'm sure the meat I eat has been fed grains. We go through a LOT of meat in our household and buy a 1/2 cow at a time - I can't imagine the cost if we needed strictly grass-fed! My vitamins and supplements are all safe (I spent over 18 hours seeking out safe varieties of everything I use - talk about wanting to rip my own hair out!). As long as I stick...
  13. I have been grain free (and LOTS of other "frees") for 8 months now, gluten free for 14 months... if anything my sensitivities have gotten WORSE. I was so hopeful that things would improve for me but they just haven't. If I stick to my 7 safe unprocessed foods I feel pretty awesome. But if I make [grain free] cookies with my kids, what I inhale makes me...
  14. Do you by any chance use alcohol-free mouthwash? Crest Pro-Health will do this to people (not to mention it's cross-contaminated by gluten).
  15. WHY have I never heard of this til now?? Wow, the second half of that documentary was fantastic information. I made my husband watch it too; it's really changing the way we look at our diets! Thanks for posting that!
  16. Behavior is the first, most obvious, and longest-lasting symptom for both of my kids. In fact, my 2 y/o daughter played with Play-Doh at daycare on Wednesday (despite my having told them before NOT to let her touch it), and we'd only been home 30 minutes when I had to call daycare and ask what on earth she got into that day - her behavior was horrific! ...
  17. I had no idea I had Celiac until my kids came along! They both had "severe MSPI" as newborns, and then as they got old enough for table food we discovered that ANY exposure to gluten caused extreme mood/behavior changes, bloody stools and rashes. (It's actually way more foods than just gluten, but gluten is the worst offender). They're 2 and 4 years old...
  18. Carageenan does BAD bad things to me.
  19. When tested soon after my Celiac diagnosis, my Vit D level was 25. My doc put me on 50,000 IU of D3 once a week for 3 months, then dropped it down to once a month dosing. I do take over-the-counter supplements daily. My bloodwork last week has me up at 53 now; it's working!
  20. I struggled to lose weight for 10 years with no success. I went gluten free 13 months ago and have lost 42 pounds, putting me at my goal weight.
  21. Soy for me causes instant chest pain, anxiety and heartburn that lasts for days. Soy oil and lecithin get me just as bad as whole soy. These problems didn't go away with just eliminating all soy; I had to go as far as all legumes. Peanuts, beans, peas... ALL of them cause these problems for me. Not as strongly as with soy, but they're definitely big problems...
  22. Yes, I have a lot of anger and "why me" over my current food situation. In fact, I rely so heavily on sweet potatoes and carrots (the only vegetables I can tolerate), that my entire body is an eery orange-yellow color. Not only do I get to suffer through the exact same 7 foods every.freaking.day, now I also have to endure questions about my altered skin...
  23. Also, gallbladder issues are not uncommon among Celiacs. Once my gallbladder quit on me and had to be removed (a month prior to diagnosis), my doctor warned me that digesting leafy greens would be more difficult from then on out. I still can't eat them. I'd lay off the salads for a while and see if that helps things.
  24. Ditto. The joint pain, gut pain, heartburn and anxiety that cropped up "out of nowhere" and had me so bummed, is quickly fading away! Stupid freaking mouthwash - this has made me so angry! I'm just so glad I read this thread; I was at the point of cutting another food out to try to figure this out!
  25. Actually... I called to check on Listerine, as that was my next go-to after chucking my Pro-Health mouthwash. They too cannot confirm that Listerine is gluten free! They do make other, gluten-containing, products on the same equipment. Not worth the risk for me.
