  1. I thought I answered this topic already, what happened to my response? ETA: Oh, never mind, it was a similar thread yesterday: Hope those answers help you some.
  2. I wonder if they would turn out better with homemade Marshmallow Fluff instead of marshmallows? Here's a simple recipe I found: Open Original Shared Link
  3. That two rises is really important too. I found out the hard way by skipping a rise one time. It was still good but not nearly as light and fluffy as when I let it rise a second time. The King Arthur recipe is my favorite and well worth the time it takes, IMO. You do have to oil the pan really well. I have a solid non-stick and the only time I had trouble...
  4. Oh and by the way I can't take credit for calling gluten-free dough spackle. I first read that term on the recipe for King Arthur Gluten free pizza and have been using it ever since. Harpgirl, if you want to see what most of your doughs are going to look like, here's a good example: Open Original Shared Link
  5. The reason I gave that advice is from my own personal experience. I had a stand mixer (not a KA) once upon a time when I was not gluten-free and lived in a house instead of a tiny apartment in the city. I NEVER used it. I used it maybe twice the entire time I owned it. I did bake a lot of things like muffins and cakes and used my hand mixer most of the...
  6. Hi, I remember your posts from when you were trying to figure out if you had a gluten intolerance or not. With your symptoms including brain fog and fatigue I would think stopping the Vitamin D is a huge contributing factor. It is possible that it took 6 weeks before your body stopped absorbign vitamins again and you started to feel bad from the low vitamin...
  7. As love2travel explained the texture of most gluten-free dough is really more like a thick paste or like spackling compound. You won't be able to knead it with your hands. I have gotten by so far just using my hand mixer but I don't make bread very often. When I do make bread or pizza crust, I can tell that the hand mixer is struggling to keep up. One...
  8. Go to counseling. Seriously. Someone that really loves you will realize his habits are making you sick and at least make an effort. You have NO choice but to be gluten-free. You had positve biopsy results that are MARSH 3! He may just need to hear this from someone else and not you. At the moment your request to him to make changes are not getting through...
  9. I hope your testing turns up something. And even if you are not feeling better yet maybe you will turn a corner soon. Just avoid the idiot that doesn't know what celiac disease is.
  10. I'm sick and tired of people commenting about how "healthy" my lunch looks when I take my own salad with cooked chicken strips, dried cranberries and almonds and some fruit for my dessert. I'm sick and tired of people assuming I'm on some sort of weight loss diet or just a health nut because I don't buy a lot of processed foods. I'm sick and tired of...
  11. I would have replied, "Oh really? When did you go to Medical school?" Not that drs. know a lot about it but I'm assuming this person is not your dr since they are eating in front of you. Tennisman, did you ever find any relief from your symptoms? Or are they still thinking it's refractory celiac? If I were you and these people lived with me I would...
  12. Well, nothing has NO risk but I can't really think how the plain kernals would be contaminated. I guess I really meant that the risk of cc would be greater on my end if I made them in a shared kitchen or an old pot or something.
  13. Cool Climates, I don't know about Orville microwave popcorn, but I use their whole kernals to make popcorn on the stove top quite frequently. It's easy, no risk of cc, and I don't have any symptoms from it.
  14. I have only found them in select stores. BJ's Warehouse and Walmart--which I don't go in very often but I will go to just buy some of them. I keep a box on hand mainly for my hubby. It's one of the few things he will make himself when I'm not around to cook or if if I get sick and can't cook. As an aside, the recipe I posted may not be the BEST one out...
  15. You could try making them yourself. Here's an easy recipe that is also dairy and soy free if you use soy-free mayo (Betty Crocker Potato Buds are gluten-free): Open Original Shared Link
  16. This sounds like hypoglycemia. I actually have the opposite experience. When I eat higher protein and less starchy carbs I don't need to snack as often to avoid that light headed feeling. When I eat a lot of carbs I will feel better at first and then crash big time unless I eat more carbs and eat more often. If this is what is happening with you, you...
  17. Open Original Shared Link Open Original Shared Link Also, google "Elana's Pantry" and you will find a blogger that makes most of her recipes with almond or coconut flour. I think all of her recipes are grain free and gluten free.
  18. Welcome Little star! To tell you the truth I mostly just use recipes I find on the internet instead of using cookbooks. You can find just about anything by searching "how to make _____ gluten free" or "Gluten free _____ recipe". This board has also been a great resource and whenever I need to know a good tried and true recipe I make a post in the recipe...
  19. I was hoping you would post and clarify that as I think i have seen you mention it elsewhere. It seems like this particular blogger either mis-read the book on GAPS or read a different one than you did. She seemed really confused and seemed to be using the terms "gluten allergy" and celiac interchangablely. I do hope she looks into it more instead of continuing...
  20. I've been meaning to make this: Open Original Shared Link But I just never seem to get around to it. If you think you can resist eating it, you can just make regular cheesecake for your family and make a gluten-free crust. If you can find Pamela's gingersnap cookies they have a recipe on the bag for making a crust out of them. Or you can make a crust...
  21. Me too! I never make it exactly the same twice though. The only ingredients that stay the same for me is peanut butter, tomatoes and chicken. ANd most of my spices are the same I guess (tumeric, cumin, chili powder, red pepper flakes, cininimon, pepper, and kosher salt). But I love to mix it up and do different veggies. Today I'm just throwing a bunch...
  22. I'm starting a pot of African ground nut stew.
  23. Yeah, I'm pretty familiar with some of the "medical treatment" of orphans from former Soviet countries (from personal experiences I won't further go into here). I don't think I would EVER trust one of those drs to treat me. I'm just shaking my head that anyone can put MD behind their name, write a book which is probably mostly theory and not medical...
  24. I think she rewrote it. She also deleted or changed a couple comments she had made where she said that celiac disease was curable and a person with celiac could go back to eating gluten without symptoms in 6 months to 3 years if they ate properly (i.e. GAPS diet). She left the comments where she said celiac disease is not a life sentence and that celiac...
