If you can get all parties to co-operate it is safer (IMO) to keep the gluten contained to one area. That way you are not having to worry about cleaning/avoiding as large of an area of the kitchen and you can also ask them to just clean the island as opposed to cleaning the whole kitchen before you can use it. I have the same problem with my family members. My mom recently called me to let me know she had been having digestive issues and was going in for a colonscopy. I urged her to get an endoscopy done at the same time with biopsies to test for celiac. I also urged her to at least ask for the blood panel tests and sent her a link to which tests to ask for...

This is excellent advice. Your current diet is very high in processed foods. gluten-free processed foods could have low levels of gluten which add up to a big effect when you eat all of that stuff all the time. They could also have some other ingredients which are bothering you and it could take forever to figure out if you have another intolerance eating... -

I do not know what caused your reaction, however I thought I could often my observations: The gluten-free BC cake maxes I have made do have eggs you are supposed to add to them. Drop the milk for sure! Some people are so lactose intolerant that they cannot even tolerate "lactose-free milk". It actually has very low amounts of lactose. Are you using any Xanthan gum or guar gum? Also if you are experimenting with texture there is a long thread here about using psyllium husk in bread. I have never heard of a DNA test for celiac. The genetic test will not "prove" you have it, it will only assess your risk of having it. I don't understand why the original test was not sufficient proof. Do you have copies of your records from back then telling you what the test was that was done back then? What are you trying to make? If it's a dressing they do make vegan mayo which may be closer to what you are trying for. It's usually made from soy however, which I can't do so I don't know the brands that are both vegan and gluten-free off the top of my head. if you have never looked into the benefits of soaking you really, really should! I will try to give you some links for reading up on the subject. You could start by soaking the seeds you already know you can tolerate like pumpkin seeds and sunflower seeds. Thank you! Based on everyone else's descriptions of their intolerance I think your suggestion is most likely. I am very sensitive to gluten cc. The last time I got a large amount of gluten by accident I coughed until I threw up. That seems to be what is happening with the corn but it is more subtle and delayed. And I don't have any effects for days afterward... -

That's good! That's what you need to do at the start. If your diet before was heavy on processed food then you may be detoxing from other chemicals and preservatives as well as gluten.
