  1. Does your job involve working with anything with gluten that could be causing your high antibodies? It's not just a danger in restauarants and bakeries, but also for construction materials (drywall and wall paper paste) and even playdough in the classroom at daycares...etc.
  2. What brands of cereal and what brands of rice cakes? You might consider dropping them for a week or two and see if that helps. Are you seasoning the chicken or the rice with the same seasonings and spices that have been on the shelf since before going gluten-free? Those spices can be cc'd from previous flour baking or from dipping a spoon in flour and...
  3. Yes and no. If made in someone else's non-gluten-free kitchen I would not eat them. Especially since you know they were making regular cupcakes at the same time for the whole class. However, my muffin tins are one of the few things I didn't get rid of when I went gluten-free. I always used muffin liners before on both muffins and cupcakes and my tins...
  4. I have seen lots of gluten-free pop tart recipes online. I have not tried them because it's not really something I miss, but maybe these will help you: Open Original Shared Link Open Original Shared Link Open Original Shared Link Open Original Shared Link Open Original Shared Link
  5. You did the right thing! Better to have been honest and have minor hurt feelings upfront (if any) then to lie or not say anything and have to REALLY upset her later when you have to admit you can't eat it. She might have bought some to keep at her house and tried to make you a sandwhich when you were there. Then you would be stuck either telling her or...
  6. I buy Mission Corn tortillas (both yellow and white) and I like them, however they must be heated in the oven or microwave to be used for tacos. They make decent enchiladas (make sure any enchilada sauce you buy is gluten-free), quesadillas and taquitos. One thing you can try to make them edible for you or your teens is to make some chips out of them. ...
  7. I have a whole chicken in my slow cooker with sweet potatoes, carrots, onions and garlic cloves. Seasoned it with rotisserie seasoning. Will probably pull something green (spinach, green beans or peas) out of the freezer to steam when the chicken is ready. We are trying to eat down our freezer and cabinets for an upcoming move and our fridge is getting...
  8. China, Korea or Malaysia. Of course, I want to go places that would be very hard to travel and stay gluten-free. If I could MOVE anywhere in the world, even for just a few years I would go to Australia or Ireland.
  9. Ditto what several others said. My kitchen is gluten-free, but my husband is not. He has tried to go completely gluten-free before (of his own choosing) and he always gives in to temptation. So he just eats gluten when out of the house. When we go to friends houses or restaurants (although rare) or if he is at work or traveling for work, he eats whatever...
  10. Oh yes, we will look into codes and such before doing things. My husband has done both electrical wiring and plumbing before, but we would get people to inspect the work to make sure it is safe. I grew up in a house built in the late 1800's. My parents were constantly changing and remodeling things--they have done everything from tearing out stairs to...
  11. Thanks Raven. Your reply was very helpful! Yes , it's the little things like installing a medicine cabinet that concern me. Or if we move into a house that is old and doesn't have electrical outlets where we want we would have to cut into drywall to install a new one. I'm not planning on knocking down walls and things right away but I would want any exisitng...
  12. It may just take time. My fatigue was not significantly improved for 6 months. My neurological symptoms got gradually better. However if you are having stomach aches I think it's time to examine what your are eating. Are you eating a lot of raw veggies? or a lot of night shades? Or a lot of high fructous fruits? Have you tried new foods that may be giving...
  13. Thanks everyone for the suggestions. We would be living in the house while renovating. We are not wanting to do it to sell the house for a profit (AKA flipping). We are just wanting to live there and gradually make changes like updating kicthen cabinets, counter tops, new bathroom fixtures, new flooring, etc. We can't afford to both rent and buy a house...
  14. Thank you for the encouragement. We are for sure going to avoid any house that has mold. Not only is it dangerous to health, it's very expensive to pay remediation companies to remove it. Perhaps we could hire someone that would work with my husband for just the drywall parts and I could go to a hotel for few days...Does anyone know if there is gluten...
  15. All my life I've dreamed of buying a fixer-upper home and making it beautiful. I have a background in design and my husband is handy enough to do most of the labor. After scrimping and saving for a few years we are finally in the beginning stages of looking for the right home to buy. Well we looked most of the day yesterday at around ten different houses...
  16. 1. Never, never ASSume something is gluten free. If eating in a restaurant ASK the manager or chef about prep and ingredients. If buying pre-packaged food, check the label and do your research if an ingredient looks questionable. A simple search of "is XXXX gluten-free will usually turn up some answers." Do be aware of outdated responses however and check...
  17. Chebe and King Arthur gluten-free flour. I use both to make pizza crusts most of the time, even though I can no longer have cheese on my pizzas, these crusts are good enough to stand on their own. Sometimes I just use them to make garlicy breadsticks and dip in pizza sauce.
  18. Are you still eating gluten? Be sure that if you eat gluten that you brush your teeth before kissing him. Also wash your hands AFTER you eat something with gluten like a sandwich. If you are eating gluten it is very easy for you to accidently cross contaminate him by holding his hand or touching his food, etc.
  19. My favorite cookbook for this type of thing is Mark Bittman's "The Best Recipes in the World--more than 1000 international dishes to cook at home". It is not a gluten-free cookbook but many, many of the recipes are gluten-free or easy to make gluten-free. He makes most things pretty simple too. He wrote a cookbook called "How to Cook Everything" that is...
  20. Oh, that sounds good! Thanks for shaing! I might have to try making it in the slow cooker. There's no way I'm turning on my oven. We are in the upper 90's here today. I STILL don't know what to make for dinner. I'm leaning toward turkey sandwiches on toasted Udi's bread and baby carrots because I really don't want to cook.
  21. ((Hugs)) Roda! I know how hard that maust have been to have that conversation and not bring up gluten or celaic. My mom recently told me her gallbladder is not functionign properly and now she is going to have to have it taken out. I had my gallbladder out about 5 years ago when my health had just started to go downhill and I very strongly suspect that...
  22. This may be reaching, but have you had your kidney function tested? It is possible to have a kidney infection or low functioning kidney's without havign any major symptoms besides lower back pain and fatigue.
  23. Sounds good! Where do you find gluten-free pitas (what brand)? Or do you make them? I have seen recipes, I think, but I have not been brave enough to try making them. With the hot weather a pita sounds faboulous!
  24. Can you buy some at the grocery store instead so you can be sure of the ingredients and prep? Even if the Queso is free of gluten ingredients it could be cc'd in the restaurant. Especially a restuarant that does not have a gluten-free menu or training in preventing cc. I have not been able to safely eat at any Mexican places because it seems like they...
