  4. Thanks! I'm really craving pizza lately. I have only had one good pizza since going gluten free and that was at Mellow Mushroom. I have used corn tortillas and rice cakes to put pizza toppings on, but it's not the same as having a crust.

  7. Kareng, Would parchment paper prevent cc from previous gluten pizzas cooked on the pan? I also have the problem of only having pizza pans that have the holes in them. Not sure how thin this pizza dough/batter is, but I wonder if parchment would work if it's a watery batter. I might try some non-stick Reynolds release foil though.

  10. Welcome! Unfortunately the testing is not always accurate. There is a high rate of false negatives. Were you gluten free or even gluten lite when the test was done? If so, that will affect the results and make them more likely to be false negative. At this point you can either push to get a biopsy (and be sure to load up on gluten before the biopsy)...

  17. Welcome! Just some advice, don't go gluten free until you have the testing done. You have to be consuming A LOT of gluten for the test results to be positive. If you are gluten free when you test it could be a false negative. If the diet helps it is really hard to go back to eating enough gluten (and making yourself sick in the process) for the tests...
  18. Yes this is true, light olive oil is better than virgin for cooking though. Virgin oils can change in flavor (and not always in a good way) when heated too high. Use a good extra virgin oil for salads and Light or regular Olive oil for cooking and you should be okay.

  23. I tried making egg rolls with the rice paper rolls and they fell apart when I tried to fry them in oil. They do bake up in the oven okay, but it's not quite the same crunch that an egg roll has. I bet they could make a slightly thicker rice paper wrapper to use as wonton or egg rolls and it would work, but the ones I have found so far are too thin.
