  2. Believe me, I will. We are going to a white truffle festival again, too, and will be consuming tons of fresh fish and seafood. We leave in 20 days and are gone for an entire month. :-)
  3. Try more sorghum as it is known to best replicate wheat flour flavour. I use it a lot and am not sure I agree it is close but after baking with about 25 gluten-free flours it may be the best you can get. Cocoa is ok but does not add the wheat or bran element much at all. Quite simply there just is not a good substitute. :-(
  4. My recipe is similar but I roast the bananas first in the oven to really develop their flavor and instead of chocolate chips I grate and chop chunks of really great chocolate. And I use my homemade vanilla as I do in much of my baking. Thank goodness cupcakes, cakes, cookies, brownies, muffins, etc. are simple to make gluten free without anyone realizing...

  7. I am in Italy a lot and have had to use my restaurant card several times. But then we are adventurous travelers and really get off the beaten path into non-touristy villages, etc.

  12. Most butters DO contain lactose. The only form my sister with severe lactose intolerance can have is ghee. She gets very sick from just trace amounts in regular butter. Some European cultured butters have less if I recall correctly. I must look that one up. Many hard aged cheeses contain trace amounts, too. Will find the source for that, too. Open...

  15. If you have a food processor you can buy turkey pieces and grind yourself as well. ETA: oops! Karen beat me to this in her response. I have never seen anything added to raw turkey meat in Canada. It is very easy to find it "naked" in our grocery stores, thankfully.

  17. Where in Italy? We go there regularly. Be careful when ordering gelato - often there is cross contamination but many flavors also contain gluten. When we travel I use restaurant cards in that country's language.
