  2. Just so you know, you can easily make a roux using gluten-free flour. And if you go to a high-end restaurant, call ahead and they may be able to accommodate you.   11. Jellies and jams are other alternatives. Guava jelly on pancakes is very good. Not gaggy sweet. You can also make your own incredibly easy simple syrup that requires two ingredients: granulated sugar and water. Then you can flavour it with other things such as lemongrass, chili powder, keffir lime leaves, vanilla bean, fruit...almost anything. Simple...
  12. MAPLE!!!!! Golden syrup is richer and deeper than regular corn syrup. It is used in many recipes. I personally do not like it on pancakes and so on because I find it too sweet for that application. But I do use it in baking. It does not have an unpleasant or offputting flavour. Thankfully it is inexpensive should you dislike it.

  21. In addition to using it in baked goods I use it in my fruit smoothies which gives them a nice nutty flavour and great health benefits which is why I use it. My dietitian told me to start using about 1 tsp a time and gradually work up to 1 tablespoon or more per serving.
  22. Are you talking about grinding your own flours or just using the flours? My VitaMix is great for grinding and like IH, my KA stand mixer is practically a miracle in the kitchen.
  23. Not as good as oats, but have you tried quinoa flakes? They are nutty like oats and have some substance to go with those dried fruits and nuts.
  24. Crave chips? You can easily make your own with no added fat on a microwave thinger called a Chipster. You can season as you wish. I bought a thing bigger than a Chipster and it's actually quite nice. Usually I am unimpressed with such gadgets but this thing is very cool. My favourite flavours are sour cream and chive/salt and vinegar. Hope you soon...
  25. Yes, very! Sherry and brandy - mmmmmmmmmmm. I don't drink much at all but I sure do enjoy alcohol in cooking.
