I don't always have the mix but if I have a few kinds of gluten-free flours on hand I just mix 1/3 of each and it's always worked out fine with quick breds, muffins etc. I've always been a good cook and hardly measure. Even better I just found these gluten free italian bread crumbs a few weeks ago. Aleia's.. they are seasoned, and come in a 13 oz. plastic container. AWESOME!!!!!! I made chicken parm and they fried up nice and browned and crispy. I have also used them for eggplant parm and stuffed zuccini. Open Original Shared Link -

The easiest thing I do is take any regular. muffin or biscotti recipe and replace the flour with equal amounts of Bobs Red Mill all purpose baking mix and add I tsp xantham gum. Voila Easy. If i don't hve Bob's mix I used equal amounts of whatever gluten-free flours I have. I've used mixes of hazlenut flour with rice and corn flour etc. Just made chocolate... -

I use plain white corn flour (not corn meal). The flour is finer and readily available here in the aisle with the international foods like Goya and Gonsalves -
There is no gluten in eggs. Perhaps you've developed an allergy to eggs.

Erewhon crispy brown rice cereal. gluten-free and tastes just like rice crispies. Also comes with berries, plain, lightly sweetened and chocolate like cocoa crispies. Not a problem for me but I'm sure those that need to avoid soy know which brands they can use. Also I've seen some of the italian tunas packed in olive oil. You can also leave it out for vegetarian or toss in any other protein ie: shredded chicken, cooked shrimp etc. -

Cannelini Bean Salad No need to measure anything. I toss together: cannellini beans, tuna, calamata olives, sliced grape tomatoes, chopped garlic, fresh basil and anything else you want to add. Drizzle with olive oil, wine vinegar, fresh ground pepper and salt to taste. -

I ordered burgers without the bun lots on ski trips for lunch. I used to feel weird doing it years ago and then came the Atkins diet and then the South Beach diet craze and everon was ordering bunless burgers with a side salad instead of fries because of the carbs. Voila! not weird anymore. -

Why would you feel like you are starving? There are plenty of foods to eat including carbohydrates that are gluten free. You don't need gluten to consume calories. -

Absolutely! Flattened villi coupled with iron deficiency anemia. Just do the gluten free diet and you are done with follow up. Nothing else needed. You already know it makes you feel better. If you are strict about the diet I wouldn't be surprised if a lot of the other vague symptoms also go away. Since celiac causes malabsorption you end up with all symptoms... -

If it were me I'd cancel the appointment and do the diet. A biopsy is the most difinitive diagnosis. Sounds like you had the work up backwards. Most GI's I've worked with or have spoken with do the bloodwork first and then confirm with biopsy. why waste more health care dollars and time. -

Agreed. I have had giant cell conjunctivitis and now have dry eye syndrome and have to use Systane drops or Genteel Gel. I had to stop wearing lenses years ago. I doubt it has anything to do with celiac. Too many non celiacs out there with the same problem. My husband, for one. It's a very common problem. No brainer..... Kitchen Aid mixer. I've had mine 15 years. Love the steel bowl and the whisk attachment is great for whipping things. Steel is non porous so it cleans well in the dishwasher if you also have to use it for gluten baking. Food processors have a plastic container and aren't as easy to get super clean.
