We didn't eliminate dairy, however, we did end up making more major dietary changes. While his joint problems went away with just the gluten, he had other issues as well. Our family is doing the GAPS Diet which is based on SCD. The main difference is that there is a lot less sugar involved. Also, there are defined stages of the diet, which you are supposed to move through as your body adjusts to each one, slowly adding one new food at a time. Gemini, I'm glad you've found what works for you. I think one big factor with meat eating is that so many people who eat it ate eating CAFO meat and/or grain fed meat. I'm the same way - I just need to learn *everything* when something like this enters my universe. It's hard to say how he will react to your enthusiasm about accommodating his dietary needs. From the way you describe his eating, physical state, and discomfort with talking about it, it sounds to me like maybe he hasn't totally come to terms with his diagnosis...

Just chiming in - my son's biggest, most obvious symptom was joint pain. Rheumatoid arthitis in his hip is what landed him in the hospital for emergency surgery and ended up setting us on the path that brought us to our conclusion that he has celiac disease. What kind of headaches are they? When we went off gluten, and especially when we went totally grain free and added probiotic foods one of the symptoms of candida die off was a bad sinus headache - front of head, face, etc. I also got ear aches with it. I don't know about the others but I want to mention that Kimball Genetics (Labcorp) has free genetic counseling for customers. I was like that the first several weeks. Cutting gluten and most grains resulted in much less sugar in my diet, and I was craving sugar, ice cream, cookies and feeling super hungry and cranky.
