Our solution is to bring substantial dishes that are gluten free (if you get a crock pot you can bring a roast, even as a college student!), and then plate up extra for seconds and guard it with our lives so that it doesn't get cross contaminated.   4. Yup. I agree re: GAPS vs SCD. My best advice with that is to take the intro slow - don't just jump into the full diet. 1. Make lots of stock 2. Have lots of veggies you can eat on hand 3. If you don't have lots of meat on your bones (the ones in the stock, lol), add muscle meats in right away, just make sure you cook them a long time in your stock...
  5. I'd tell him if he's going to eat my gluten-free snacks in the house, the whole house needs to be gluten-free. Really, it's probably good for him, too. That way you'll get the benefits of a gluten-free house, you won't have to resent him eating gluten-free around you, and if he wants something with gluten he won't be eating it in front of you.
  6. Good luck! My best advice is to get a lot of saturated fat into your diet, and to eat larger portions of meat than you used to. Don't try to make up your calories in sweets, it'll just make you feel like crap.

  10. You might have better luck with a diet that is even more basic than gluten-free. Our family did not have symptoms as severe as yours but we realized gluten-free didn't fix everything.   12. I used to be in charge of a salad buffet and let me tell you, people are disgusting. I think it's far more likely to be cross contaminated than safe.
  13. We always buy nuts in bulk rinse them, then soak the nuts in salted water overnight. The next day we dehydrate them about 24 hours. This process helps remove cc and also, makes the nuts more easily digestible.

  15. It could be the sugars that are the problem, due to the damage your gut has taken from the gluten. The diet our family has done is aimed at restoring gut health and really takes its time introducing fruit.   21. You do need to be that careful about it. The reason is that celiac disease is different than an allergy. With an allergy you can tell right away if you are having a reaction. If you are "not that sensitive" you just don't get a reaction. If your reaction is not very severe, it's not doing damage to your body. Your body is attacking the thing you are allergic...
