  1. That's been my trick for the past couple of years. Because I often cooked Asian dishes before, it was one I figured out pretty quick. I buy the wide flat ones, and break them into smaller pieces to replace wide egg noodles. I get the thinner, flat ones for linguini, and even the very thin, brown rice ones for spaghetti. I also buy rice crackers for...
  2. First of all, my heart breaks for you. Whether you have been officially diagnosed, or just discovered that your tummy doesn't hurt any longer when you eat gluten-free, a girl your age NEEDS proper nutrition. One hint, don't sweat if the rest of your family eats all those things you can't have anymore... eventually you are going out into a world where...
  3. What a better way to use the last of my 10 required posts than to introduce myself. Can't wait to get the secret handshake! I am a bit awed by the talent, education and careers here. My job is simple, but gives me the best of all worlds. I'm a sales rep for an airline, and get to work at home (and not poke my nose out the door for days at a time during...
  4. It WAS going to be a simple soup and salad night for my family, but then I found that recipe for Brazillian cheese bread in another thread here, and I have to add it to our menu. They look soooo delicious, and I have everything we need right in our house.
  5. Does it bother anyone that she was tested for something that she clearly told the doctor she did not want to be tested for? That the doctor followed her husband's request, in her absence, against her will? Sounds like a clear violation of professional ethics to me and that alone, aside from the doctor's evident lack of understanding of celiac disease...
  6. Our family has always enjoyed our tacos on soft (flour) shells. When I went gluten free, I began frying up a couple of corn tortillas flat, and making tostadas instead... same fillings, just a different conveyance to the mouth . Teenage son decided to try one and liked it better, so we simply stopped buying flour tortillas and make tostadas instead...
  7. I make my own brown rice cereal. The texture is similar to steel cut oats, or Irish oatmeal. I grind the rice on the coarsest level in our coffee grinder, then mix 1/4 cup brown rice cereal w/ 1 and 1/2 cup liquid (I personally use half water and half milk) and cook it in the microwave for 9 minutes at half power. Let it sit for another couple of minutes...
  8. No real advice, since it sounds like you already have it under control. But you reminded me of when we brought our little kitty home over 10 years ago. She was barely the size of a beany baby, our pup was over 100 lbs. He was a gentle pup, but no bunny or mouse in our back yard was safe from him, so we were concerned about the tiny kitten and put her in...
  9. My worst problem living with teenage gluten-eaters is... they eat my food, too! I don't mind sharing, and most of our house is pretty gluten-free. But, I do buy the snacks and foods that they like, occasionally. However, what my kids do (teen boy, in particular) is pass over their stuff, and eat mine all up. I just found what was left of a bag of...
  10. I refer to myself as gluten intolerant simply because I have never officially been diagnosed. I started gluten-free to see if it helped, and yes, my symptoms did go away, so now its too late to get a diagnosis... unless I want to gluten myself to do so... and I don't. I don't want to claim a disease that has not been diagnosed by a doctor, so "gluten...
  11. It is interesting the different reactions the same situation. I am one of those who does not get upset at all... in fact, I encourage people to completely forget about it. It makes me uncomfortable when people focus on what I can not eat. I have had more people try to accomodate my dietary limitations, and leave me in a quandry for it. They will...
  12. I'm new to this forum, and actually came into this thread looking for travel ideas. Of course, true to my nature that I start right off giving advice, instead. When I fly, its usually just for a day. Since most airlines only offer snacks or limited meal selections these days, I find it necessary to bring my own food along for the flight. And, since...
