ARCHIVED Anyone From Wisconsin?
aeraen replied to MelindaLee's topic in Introduce Yourself / Share Stuff
Hello from another cheesehead. I'm in a suburb of Milwaukee. Thanks, SGWiskers, for the advice on the facebook page. I haven't been out to eat much since deciding to take this seriously, because I just don't trust most restaurants, yet. However, I do know that Sazs in Wauwatosa understands celiac very well, because members of their staff and some... -
ARCHIVED Fatigue Upon Exertion. Healing Time?
aeraen replied to Waverlywoods's topic in Coping with Celiac Disease
Remember, too, that even though you are no longer causing damage to the villi in your intestines, it will take a long time for them to completely heal and begin absorbing the nutrients effectively. For some people, I understand, it can take up to a year or two. -
ARCHIVED Do Gluten-Free Foods Need A Separate Aisle?
aeraen replied to splash's topic in Gluten-Free Foods, Products, Shopping & Medications
I shop at a very large(6 football fields big) grocery store that has a lot of specialty aisles, a wonderful international foods aisle, as well as great Asian and Mexican food aisles. They also have a gluten-free "half" aisle, but some gluten-free items (like Blue Diamond crackers) are in the "regular" aisles. I guess, in the end, it is really up... -
ARCHIVED Contaminated Rice?
aeraen replied to glut'nfree's topic in Gluten-Free Foods, Products, Shopping & Medications
No particular knowledge on the subject, but I eat brown rice regularly now, although I've had no problem w/ white rice, either. However, it does stand to reason that the less your rice is processed, the less opportunity there is for cross contamination. -
Have you considered one of those blender/food processor combinations? I don't know anything about ratings, but one machine that takes the place of two would be a big hit in my kitchen.

ARCHIVED Must Have Kitchen Tools!
aeraen replied to bridgeofsighs's topic in Introduce Yourself / Share Stuff
Dh is a kitchen gadget junkie who really needs a 12 step program. I'm right on board w/ the rice maker. Mine is 30 years old and still can cook up a mean pot of rice. Its used several times a week. I believe there isn't a day that goes by that I don't use my food processor. I'm very sensitive to onions (sniff, sniff) and can't imagine having to... -
ARCHIVED Why Can't She Have It In Moderation?
aeraen replied to JustForJen's topic in Coping with Celiac Disease
Just another wife who thanks you for being pro-active on behalf of her health. Look at it this way, if she were diagnosed as diabetic and had to give up sugar (and her beloved Kit-kats), you wouldn't be thinking after a month that maybe the doctor made a mistake. It is what it is. But, truthfully, it is NOT a life sentence. I'm one of those... -
ARCHIVED Gluten Free Cookbooks
aeraen replied to vegoutpittsburgh's topic in Gluten-Free Recipes & Cooking Tips
I've found that I'm finding better gluten-free recipes online, and here, of course. DH and I had a 3 inch binder in our kitchen filled with plastic page protectors. If we found a recipe that we liked, we printed it out and tried it. If it passed the "family test", it got put in the binder. That binder became our go-to cook-book for family favorites... -
ARCHIVED How Can I Handle Watching People Eat All The Things I Want To Eat
aeraen replied to zus888's topic in Coping with Celiac Disease
Have you tried the Brazilian Cheese rolls recipe that was posted here a couple of weeks ago? They will make you forget all about OG's breadsticks. Maybe you can make a batch (they are UBER-easy) and pop a few in a baggie in your purse. Between OG's gluten-free pasta, a salad and your the cheese rolls, you won't be missing a thing! I actally have... -
ARCHIVED Focaccia Bread Recipe...
aeraen replied to love2travel's topic in Gluten-Free Recipes & Cooking Tips
Right into my cook book that went! It sounds absolutely delicious! -
Thank you, Sylvia and Mushroom for the info on the glutenous/sweet rice flour. I've found both (and, yes, at my fav Asian food store) but the one labeled "sweet rice flour" was almost twice the price. I am extremely lucky to have a large grocery store witin walking distance from my house with a generous Asian food aisle, as well as a huge Asian food...

ARCHIVED The Cake Doctor Bakes Gluten Free
aeraen replied to Dixiebell's topic in Gluten-Free Recipes & Cooking Tips
Thank you for the recommendation. I just ordered it from my library. -
OK, after two years or eating gluten free, I'm finally venturing into the world of home made gluten free bread. I've amassed a nice selection of recipes I want to try, but am finding that some call for tapioca or potato starch, and some call for flour. Does anybody know if there is a difference? Or is it really the same thing? What about rice...

ARCHIVED Jealousy?
aeraen replied to healinginprogress's topic in Parents, Friends and Loved Ones of Celiacs
I sure hope he doesn't lay this guilt trip on your daughter. Its hard enough to deal with being so "different" with out feeling like your parents resent having to spend the extra money. Our house is, largely, gluten-free, simply because we are cheap and make most of our food at home. However, I do buy some snacks for my DH and son that are not gluten... -
ARCHIVED Is There Anyone That Doesn't React When Glutened?
aeraen replied to zus888's topic in Coping with Celiac Disease
Never thought I would say this, but I feel sorry for all of you who are asymptomatic. I certainly wouldn't want cancer to be my first symptom. It's almost like those kids who do not feel pain and don't know when they are putting their hands on a hot burner. -
ARCHIVED Is There Anyone That Doesn't React When Glutened?
aeraen replied to zus888's topic in Coping with Celiac Disease
I just can't imagine how hard it would be to stick to gluten-free if there were not symptoms to remind me just WHY I have to do this. Being reminded by the occasional glutening incident is what keeps me on the straight and narrow. -
ARCHIVED This Might Be A Very Silly Question But Here It Goes :(
aeraen replied to Dellers's topic in Coping with Celiac Disease
Funny, I had the same anxiety when I traveled to the UK Everyone warned me that the gas (petrol) stations didn't always have restrooms like they do here. But, I never had a problem finding one. And, yes, restaurants always have restrooms. I often swing into a McDonalds or other fast food restaurant just to use the loo. -
I don't have the dairy/eggs issue, but for breakfast I eat my own home made brown rice hot cereal. Once a month, I toast brown rice in the oven on a jelly roll sheet. Then I run it through the coffee grinder (after I clean it out of course, I like coffee in the morning, just not IN my cereal). Then, each morning I mix 1/4 cup ground brown rice w...

ARCHIVED Graham Cracker Substitute
aeraen replied to psawyer's topic in Gluten-Free Recipes & Cooking Tips
I'm sorry I didn't see this until now. I have a great crust recipe that I use all the time, and it's easy as... um...well, pie! It isn't graham cracker, though, but I think with cheesecake it is even better. 1 3oz package cream cheese cut into cubes 1 stick butter 1 cup flour of your choice (I use plain rice flour) 1 TBS or so sugar Put it... -
ARCHIVED Did You Have A Trigger That Started Your Symptoms?
aeraen replied to afreeclimber74's topic in Coping with Celiac Disease
Thanks for bringing this thread up. I never realized how people could pinpoint the origins of their celiac. I actually think I had it all my life as, through the benefit of 20/20 hindsight, I can see many things from childhood on that point to it. I remember having sudden diarrhea attacks as a child. Not chronic, but common. I also had exercise... -
That was the surprise benefit of going gluten-free for me. I was begining to walk like an old lady, and I was only 50. I thought it was the result of being old, fat and out of shape. About a month of going gluten-free, it suddenly occured to me that I was walking normally, not walking like Frankenstein's monster the first 20 steps after getting...

In a recent post, I complained about not being able to just open a can of Campbells tomato soup. I mean, we all grew up on this stuff, it's like the ultimate comfort food... not to mention the base that launched a thousand casseroles. Because every recipe I looked up for home made tomato soup started w/ fresh or canned tomatoes, and I wanted CONVENIENCE...

:channeling Mike Brady: "When you cheat, you only cheat yourself." : This is one of those instances where that advice is so spot on. The aching sides, multiple rushes to the bathroom, not wanting to go out incase I need a bathroom RIGHT NOW, are simply so not worth it to me. While there are things I miss, and as I said in an earlier thread, I miss...

ARCHIVED Food Allergies And Weight Loss
aeraen replied to celiac crusader's topic in Coping with Celiac Disease
Yikes! giving up garlic and onions in my house would be even harder than giving up gluten! Can you tell me what led you to suspect onions and garlic? I would never have suspected those. -
I was thinking today that, I don't miss any particular food... I can, pretty much, make or adapt any food I liked before. But, what I really miss is CONVENIENCE. In order to eat semi-normally, and with out spending a bundle, I have to cook my own and plan ahead. And I'm just tired of planning ahead. Sometimes I just wish I could swing into...
