ARCHIVED The Chronicles Of Pooping
Monael replied to Homerhurts's topic in Coping with Celiac Disease
According to that video, I have never had a normal poop (at least I don't remember one so if I did it was many many years ago...) What does that mean? It has gotten a lot better since going gluten free but it still is not normal. -
ARCHIVED Crackers
Monael replied to The Gammy's topic in Gluten-Free Foods, Products, Shopping & Medications
It really is a matter of preference, but like some I do not like the Glutino crackers, but love the Schar brand. They do crumble if you are not careful. I usually cut some cheese up and just set it on top so it's not really an issue. But if you were going to use a spread you probably should use another brand. I like Crunchmasters too but that is not like... -
ARCHIVED I Had Hoped To Never Return To This Place
Monael replied to zus888's topic in Coping with Celiac Disease
I think you are trying to work things out for yourself, just by being here and being so honest. I think that is what struck me the most about your post. That even though on the one hand you are in major denial, at the same time you are saying exactly how you feel. I don't have the same problem as you regarding the anger at what I can't eat. I think... -
ARCHIVED gluten-free Finger Foods?
Monael replied to spryng's topic in Gluten-Free Recipes & Cooking Tips
I always serve deviled eggs, a veggie tray with ranch dressing, and guacamole and corn chips. -
ARCHIVED Need To Vent Because Mom Is Not Helping
Monael replied to Goof's topic in Parents, Friends and Loved Ones of Celiacs
My boyfriend forgets all the time. I really don't get upset about it because honestly, before realizing I needed to go gluten free, I didn't know a whole lot about it either. I mean, do we all research peanut allergies, and shellfish allergies and the like? I suppose some of you might say YES but I don't. I have so much going on in my life that I barely... -
ARCHIVED Mother Drives Me Nuts Cooking Gluten Laden Foods
Monael replied to catlover0329's topic in Coping with Celiac Disease
Hi Lisa, I live near Los Angeles, in the San Fernando Valley. How about you? -
ARCHIVED Mexican Recipes
Monael replied to CarolinaKip's topic in Gluten-Free Recipes & Cooking Tips
Enchiladas are yummy. You can find canned enchilada sauce in grocery stores. I soften the tortillas by dipping them in enchilada sauce that I have heated up in a pan. Then put shredded chicken or beef, or just cheese if you want and roll them up. Put them in a baking pan, then pour any left over enchilada sauce on top, top with cheese and bake for about... -
ARCHIVED Corn Tortillas As Sandwich Bread
Monael replied to MikeTambo's topic in Gluten-Free Recipes & Cooking Tips
I use corn tortillas a lot for a variety of things but not really sandwich stuff (I cook a LOT of mexican food). For lunch meat, I use rice cakes with mayo, and sliced cheese. If you want to improve the flexibility of corn tortillas, wrap about 3 of them in a paper towel, and cook for about 20 seconds, depending on your microwave maybe 5 seconds more. ... -
ARCHIVED Mother Drives Me Nuts Cooking Gluten Laden Foods
Monael replied to catlover0329's topic in Coping with Celiac Disease
I, too, am new to the gluten free diet, self diagnosed, and feeling a great relief from intestinal problems that I am sure many can relate to. That being said, maybe I come from a perspective that perhaps might help. When I read the OP I thought to myself, that is something that I might have done because in the beginning I didn't realize how devastating... -
ARCHIVED gluten-free For Broke College Kids
Monael replied to MissHaberdasher's topic in Gluten-Free Recipes & Cooking Tips
Rice cakes are pretty inexpensive and I use them all the time for lunch. You can top them with whatever sliced meat you want, mayo or mustard, and some cheese, even peanut butter and banana. You can serve salad or cut up veggies on the side, some fruit, whatever you have on hand. It is my stand by lunch when I can't think of anything else. If you like mexican... -

ARCHIVED Explaining Celiac To People Without Talking About Poop?
Monael replied to colfax's topic in Coping with Celiac Disease
OMG I can't imagine what I would say to someone if they pressed me for details. Your idea is pretty funny! But honestly, if someone is skeptical or doesn't accept what I tell them then I really don't care. It's really none of their concern. I know it can be tough sometimes when we are dealing with people we have to work with or get along with. I have... -
ARCHIVED Explaining Celiac To People Without Talking About Poop?
Monael replied to colfax's topic in Coping with Celiac Disease
I have described it by saying that it gives me gastrointestinal problems. You really don't need to go into detail. If you say you can't have gluten because you have celiac disease or you are gluten intolerant, most people don't really ask what symptoms you have. At least that has been my experience. I have also said that it gives me all sorts of problems... -
Well I have seen posts that question whether contact with wheat products can give someone DH and frankly I just don't have time to do the research so I don't know what the arguments are pro/con. I didn't give it much thought really. I did notice that going gluten free gave me the glorious side effect of stopping my insane scalp itch (that was accompanied...

ARCHIVED Holiday Party At Work Today
Monael replied to Marilyn R's topic in Coping with Celiac Disease
I am sorry you had such a hard time. I know I have had a hard time with a couple of situations at work but thankfully I was able to get by at the time. I am wondering how I would be able to deal with that situation and the only thing I could come up with is just not eating. A funny story about a time before I was gluten free. It was a Thanksgiving... -
ARCHIVED Black Pepper The Silent Ingredient
Monael replied to Cinnamon7778's topic in Coping with Celiac Disease
Maybe you are just sensitive to black pepper? I use it all the time and I sprinkle LOTS of it on my food. I love pepper! But I eat a lot of spicy food so pepper to me is fairly mild. -
ARCHIVED Questions On Coping In General
Monael replied to josh052980's topic in Coping with Celiac Disease
One thing that helped me was focusing on the foods I COULD eat. There are so many delicious things I can eat that it helped me deal with what I can't. Try to focus on that. And also how much better you feel going gluten free. That also helped me immensely. I feel so much better that I am honestly afraid of eating gluten now. -
ARCHIVED Sluggish Gallbladder/liver: Herbs And Salicylate/gluten Sensitivity
Monael replied to YoloGx's topic in Coping with Celiac Disease
WOW I have a lot to learn I am going to have to do a lot of research because this whole topic is fascinating. My gallbladder has been giving me a whole lot of problems and I don't want surgery-I will avoid it at all costs. The only way I would consider it at this point is if it became infected and it was endangering my life. Thanks for all the info! -
ARCHIVED Tamari gluten-free Soy Sauce
Monael replied to Lilypad517's topic in Gluten-Free Recipes & Cooking Tips
I use tamari. It tastes a little bit different from regular soy sauce but it didn't take very long to get used to it. I love to marinate chicken breast in it, it is so delicious! -
ARCHIVED Sluggish Gallbladder/liver: Herbs And Salicylate/gluten Sensitivity
Monael replied to YoloGx's topic in Coping with Celiac Disease
I am really amazed at connections that I am finding with gluten issues and other gastrointestinal problems. I am currently undergoing testing because I have abdominal pain that I am assuming is related to the gallbladder (upper right quadrant pain, nausea and bloating). I know I do have gallstones but they are not always symptomatic. I wasn't aware of... -
ARCHIVED Uses For Bob's Red Mill gluten-free All-Purpose Flour
Monael replied to Darwin's topic in Gluten-Free Recipes & Cooking Tips
I thought the banana bread was pretty good. There is a recipe on the website. It wasn't the greatest but I also bought a whole lot of it when I found it discounted at Big Lots. I also like the pizza crust, and am going to use the pizza crust recipe as a basis for an idea I have for focaccia. I do notice that there is a bit of a strongish flavor to it... -
There are rude people everywhere unfortunately. I really don't talk much about eating gluten free to people, with the exception of family and close friends. I just don't feel like explaining it or subjecting myself to any of that. There have been times that I have been offered cookies or some other gluteny item, and I just say, no thanks. No explanation...

ARCHIVED Importance Of A Diagnosis
Monael replied to Curlyqueen's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I agree that it is a personal decision. Through accidental experimentation with my diet, I found that not eating gluten alleviated my chronic diarrhea and bloating, gas and extremely itchy scalp. I searched the internet and found that I might have celiac disease. Since I went gluten free before discovering that I had to be eating gluten in order to get... -
ARCHIVED Just Need To Vent...
Monael replied to glutenfreemamax2's topic in Coping with Celiac Disease
The only thing I have found so far that is extremely inconvenient about going gluten free is the need to plan ahead so that I can eat without worries. My son is not gluten free (I am a single mom). I am able to keep him from "suffering" from my gluten free diet by keeping bread (in a separate place so that I don't have to worry about crumbs getting into...
