ARCHIVED Fructose Malabsorption
sreese68 replied to Strawberry-Jam's topic in Food Intolerance & Leaky Gut
My reactions take two days to show up. When I first started my elimination diet, it took 3 weeks before I felt better. -
ARCHIVED Do You Take Longer To Heal From Stomach Virus?
sreese68 posted a topic in Coping with Celiac Disease
We passed a virus around the family that consisted of major fatigue for a few days (8 days for one kid) and lack of appetite/bloating. I felt it mildly 10 days ago and had the full force 9 days ago. My stomach is still off - bloating, gas, a touch of C. I'm concerned it's taking so long for me to feel better, and I'm worried this is a new food intolerance... -
ARCHIVED Fructose Malabsorption
sreese68 replied to Strawberry-Jam's topic in Food Intolerance & Leaky Gut
You may want to check out the Yahoo group for those with fructose malabsorption. It's a complicated one to figure out. If fructose is balanced in a food with sucrose, the sucrose buddies up with the fructose and helps it get absorbed, so these foods are safe. Ripe bananas are fine due to this. Also table sugar. Unfortunately, if you eat a lot of safe... -
ARCHIVED Back On The Wagon And Icky
sreese68 replied to Chad Sines's topic in Coping with Celiac Disease
I tried Digest Spectrum enzymes for awhile (same maker as your enzymes), and it gave me migraines and C. I get C from food intolerances. I'd personally stop taking it and try it again when you feel better. Try it for a few days before adding anything else new. -
I like exercise DVD's because I can exercise after the kids are in bed. If you have Netflix, it's a good way to try out exercise DVD's before buying anything. And you can get some through instant watch, too. Neuropathy has weakened my muscles. So far, I like Leslie Sansone's "You can Do! Pilates". There's about 20 minutes of lighter work and 20 minutes...

ARCHIVED Acne Clearing Up On Gluten-Free Diet?
sreese68 replied to suziq0805's topic in Dermatitis Herpetiformis
I'm 42. I had been battling cystic acne since I was 15. It went away when I went gluten-free. I had an initial outbreak of acne when I first went gluten-free - kind of like when you first start a new acne medication. Then, it was gone. I did a gluten challenge, and it came back with a vengeance! My dermatologist was all ready to start me on antibiotics... -
ARCHIVED Travelling To Far Away Relative's Homes For Thanksgiving
sreese68 replied to BethM55's topic in Coping with Celiac Disease
Buy paper towels for drying your hands in the kitchen. Buy your own sponge for cleaning and keep it on top of the fridge, so no one else will think to use it. Do not let your utensils come into direct contact with the kitchen counter or dining room table. Open the fridge, drawers, etc with a paper towel in your hand if you get tired of washing your hands... -
ARCHIVED I Found A Good Roll Recipe
sreese68 replied to sariesue's topic in Gluten-Free Recipes & Cooking Tips
Thanks so much for posting this! I just got some of their flour in the mail, and I need a good roll recipe. -
ARCHIVED Going To The Zoo
sreese68 replied to glutenfreemamax2's topic in Coping with Celiac Disease
I have 4 kids, so trust me on this one. When you have a couple or more young children of your own, you will understand the desire to eat in the park/zoo! LOL! Walking ALL the way out to the car and then ALL the way back in is very tiring with hungry young children. They get tired and cranky, and you get tired and cranky. In my opinion, the main benefit... -
ARCHIVED Why Are People So Insensitive?
sreese68 replied to espresso261's topic in Coping with Celiac Disease
I don't have much to add, but I will say that this system is amazing!! It's pricey, but it really does keep your food hot a long time. I took mine to London and used it on the plane, at the park, in a pub, at the zoo, etc. I even had a flight attendant ask me about it and say that it was the neatest food system he'd seen. I went directly to their website... -
ARCHIVED Soy Free/gluten Free Tuna
sreese68 replied to GFreeMO's topic in Food Intolerance & Leaky Gut
Wild Planet. Our nicer HEB grocery store started carrying it. Sprouts has it, too. You can buy it by the case from the store with a name of a river for a good price if you have a prime account. -

ARCHIVED Challenging Soy - Do I Have This Right?
sreese68 posted a topic in Food Intolerance & Leaky Gut
I've had soy out of my diet for 4 months at least. (removed it during a large elimination diet, not because I suspected problems) I want to test it, so I can increase my restaurant options since we're traveling a couple of times in the next month. OK, so from reading here, I understand that people can have different reactions to different types of... -
ARCHIVED Challenging Gluten
sreese68 replied to jswog's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
I did exactly this not only for the doctor, but also for myself. I needed to KNOW it was gluten causing my problems and not something else. Be sure to write all your symptoms down and save it in your computer. I was very surprised what mine were as I was expecting stomach issues and I ended up with neuro issues. -
ARCHIVED Gluten Ataxia Vs. Neurological Problems Due To Nutritional Deficiencies
sreese68 replied to T.H.'s topic in Super Sensitive People
Neuro problems from celiac are not always due to nutrional deficiency. I get neuropathy, hypoglycemia, anxiety, brain fog, irritability, fatigue, lightheadedness, etc from eating gluten, but my nutrient levels are all normal. Gluten can cause the immune system to directly attack the nervous system. And this is what my neurologist believes is happening... -
ARCHIVED Hotel Mini-Fridge - Cold Enough For Meat?
sreese68 posted a topic in Traveling with Celiac Disease
My husband and I are having an anniversary get-away this weekend. The hotel said that they can remove everything from the mini-fridge, so I can store food there. Are those things cold enough to safely store ground meat for a couple of days? It's a nice hotel if that makes a difference -
ARCHIVED gluten-free Cottage Cheese
sreese68 replied to terryjean's topic in Related Issues & Disorders
I was wondering why Organic Valley says that their cottage cheese isn't gluten-free even though there's no gluten ingredients listed. I found this on their website under the comments on their cottage cheese produce: Question from consumer dated 4/16/10: "I am a celiac, trying to learn to discern gluten free or not on cottage cheese labels. I see your... -
ARCHIVED What Are The "health Issues" Of The gluten-free Diet?
sreese68 replied to chrissyinnj's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
Teff and quinoa have a lot of fiber. Try one for a few days before trying the other as some people can't tolerate them. Potatoes with skins also have a lot of fiber. -
ARCHIVED A Good Resource For Starting An Elim Diet?
sreese68 replied to birdie22's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
I started with a FODMAP diet. Took 3 weeks for my GI symptoms to improve. I don't think 3-5 days is enough time for any style elimination diet. I used the book "IBS Free at Last" as a starting point (she also has a website). One reason was that I highly suspected fructose to be a problem for me, and this was one of the things you eliminate on a FODMAP... -
ARCHIVED It's Been A Horrible Day- Can Anyone Help?
sreese68 replied to suziq0805's topic in Celiac Disease Pre-Diagnosis, Testing & Symptoms
My symptoms are mainly neuro, too. I didn't have much improvement neurologically speaking in my first two months gluten-free. BUT when I reintroduced gluten for a few days to see what would happen, I definitely reacted to it - jitteriness, anxiety/irritability, brain fog, hypoglycemia, fatigue, lightheadness, tinging up my entire leg. So if you aren't... -
ARCHIVED Pastry Flour & Buckwheat
sreese68 replied to MerrillC1977's topic in Gluten-Free Recipes & Cooking Tips
Pastry flour is a low-protein flour, but it certainly isn't gluten free! I don't know why I like to watch cooking shows when I can't eat 95% of what they're making (multiple food intolerances). I'd love to see one of those cooking competitive shows have a competition where the chefs have to SAFELY prepare a gluten-free meal. Can't you just see Gordan... -
ARCHIVED Can I Trust A Gluten-Free Meal From American Airlines?
sreese68 replied to lucia's topic in Traveling with Celiac Disease
I had no trouble with it on our flight from the US to London and back. On the way out, the chicken was dry as toast, and the breakfast was freezer burned. I imagine the specialty meals sit in the freezer longer than regular meals, so I was not surprised. On the way back, the food was fine. (I couldn't eat the bread or cookies due to other food intolerances... -
ARCHIVED Wheat Flour Sourdough Starter Safe?
sreese68 replied to alicewa's topic in Gluten-Free Recipes & Cooking Tips
You may want to read the article a little more closely. It says that the only sourdough bread that was tolerated was made using specially treated wheat (the resulting bread had 8ppm gluten). It further says that sourdough made with grocery store wheat should NOT be eaten by people with celiac. Also, the sample size of the study was TINY. Only 3 people... -
ARCHIVED My Progress/fiber Question
sreese68 replied to josh052980's topic in Coping with Celiac Disease
I deal with C as a symptom of my food intolerances, so I've had to up my fiber and try to keep it pretty level. My method is kind of a pain, but it's helped me figure out what to eat in a day. I write down what I eat and track how much fiber I've had. If I'm low for the day, I eat something extra before bed or take more Citrucel. After doing this awhile... -
ARCHIVED What Are Your Favorite Foods/snacks That You Can Still Eat?
sreese68 replied to maitrimama's topic in Introduce Yourself / Share Stuff
Fritos. LOVE those! Is she crafty? There are people who make VERY creative-looking bento lunches. Just google "bento" and check out some images and websites. You can get rice molds and make rice balls into interesting shapes and decorate them. Maybe she'd feel better about taking lunch if she could take it in a pretty container or one that was...
