I've made this bread several times and it's a pretty good substitute for sandwich-style bread. Very light, etc. But every time I cook it, it has this big "bump" on top and will slightly collapse (but not too bad - the pictures were taken after it fell a little.) Is there a way to avoid this bump? -
I teach middle school and have had a few issues so far this school year (we start back at the beginning of August.) If you have to be in the classroom for eating, etc. my advice would be to create some type of "gluten-free" area that is in a small space where you can freely eat. You probably can't eat when they do if you're having to go back and forth...

I agree with others - if you don't have an immediate reaction to gluten that will ruin the day, go ahead and act / eat "normally." Then you can begin your gluten-free diet. Your wedding and accompanying events is something that you will remember forever. Don't stress yourself out (and possibly become sick from it) by trying to begin a new diet on that... -

As others have mentioned, I'd double check everything to make sure there is no CC. Little things - vitamins, other medications, toothbrush, etc. Have you spoken with your doctor about the anxiety? If it continues and other things don't work, he/she may be able to either prescribe something or give other recommendations for dealing with it. -

I'm referring to conditions that result from the malabsorption of nutrients due to the lining of the small intestine. It seems like there is some sort of competition for a label - I have no idea why, though. While I agree to say whatever works to make people understand what you can/can't eat, IMO medically they aren't the same thing. -

I'm also 3 months in and have the same issue with cramps. They definitely feel more menstrual than stomach, but they happen even when I'm mid-cycle. Not sure if it's celiac related or not. My family has a pretty strong history of GYN problems, so I hesitate to blame it on celiac. -

Most likely, your doctor's office isn't the place that actually ran your test. While they draw the blood, they will send the blood somewhere else for a celiac panel. -

The only time I've eaten off a buffet so far is first thing in the morning when I was at a retreat. I was the first person to get to the buffet that day and I got some fresh fruit before anyone else had the chance to drag their plates across it. My biggest fear with buffets is CC - people with bread and such on their plates passing over all the food....
