  4. I second the cornmeal. I'm not a big fried fish eater, but I WILL eat it this way! Some of the other gluten-free flours get sort of gooey when fried and that won't work well with fish. the cornmeal coating gets nice and crispy. God bless, Mariann

  11. Dr. Fine is the only one who tests for the gluten intolerance genes as far as I know. The other labs only check for the 2 known Celiac genes (DQ2 & DQ8).   22. I've never noticed that Mission tortillas say gluten free on the bag! I don't buy them because they are made with guar gum (I believe) and I cannot digest guar gum very well. I don't recall the brand, but I found some that do not contain gluten or guar gum and that is what I use with no problems. I'm glad that Mission says gluten free. That will help...
