Yes, it could be celiac disease instead of IBS (or in combination with IBS). I was misdiagnosed with IBS 17 years ago. My GI doctor still insists IBS is my problem, not gluten, but I know better. The Kinnikinnick donuts are very dense and cakelike donuts (but have a good taste). I agree with Richard about the kind of fluffy, light glazed donut that you want, they don't exist! My oldest boy has been on the gluten-free diet now for just over a year, and has been having stomach pain/nausea/vomiting since November. All his blood/stool/urine tests came back normal and his upper GI x-ray was also normal. I've heard this from multiple people as well. I think what Viola said is true. If they were properly diagnosed before, then they still have it. It could have gone into a sort of remission during puberty, but it is not gone, and they should still be gluten-free if they don't want to be sick again.
