After 6 months both my children still have elevated numbers but they have come down. The GI doctor was not concerned as the numbers are coming down. My son's numbers were extremely elevated (above 300) and after 6 months were in the low 100's. I was told it could take a year to a year and a half for his numbers to normalize. We go prepared-own cereal, toaster bags with our own bread and try to have frig in the hotel room for yogurt. We will eat the fruit and drink the milk and juice but that's about it. Once we did ask about the hash browns and the kitchen staff were nice and checked the ingredients for us. We decided not to risk it. -

It was good ole Maine Lobstah as I'm a Mainer, but a transplant. Kids are natives though! Tonight will be breakfast for dinner. Blueberry pancakes and bacon. Need to ask my daughter what she wants the next two nights before she goes away for 5 weeks to a summer ballet program. -

I really think the key to the soft and chewiness of the second recipe is putting them in the freezer and DO NOT overcook them. They become rock hard if you do! -

Thanks so much for the suggestions. There's a Trader Joe's right by the hotel she is staying at and there is a small Whole Foods 1/4 mile away. We did replace our toaster with an inexpensive toaster and we hate how it toasts. We are finding the gluten free breads toast differently. What brand of toaster do you like?
