Personally, I believe in better safe than sorry. For what it's worth, I absolutely don't think that you are being too careful. I do the same for myself, and it keeps me from getting sick. Have you tried the plain pie shells? I usually like to add my own pie "guts" because I don't like things as sweet as most people do, but I don't know if I can make a good gluten-free pie shell on my own (terrible baker). -

My stomach problems were always "stress", and my skin rash was misdiagnosed for 2 years (it's DH, but was called everything from folliculitis to "some kind of dermatitis" to "an outward expression of my emotional distress"). ETA: I had the "stress" related stomach problems for 10 years before my actual diagnosis. -

I have safely eaten items with white sauce at chinese restaurants, but I always clearly specify that they need to use a newly washed pan and untensils. I would bet that it was cross contamination that got you. -
I'm secretly hoping that! I'm going to stay off it for a while longer, and let my whole system get back into order, then try to add it again. (Although, I did recently try to add dairy back in and was fine for a few days, then started breaking out again).

I don't know. It might even be different at every location, maybe that is why they no longer make a list available online. All I know is that on the list they keep at my local place, shrimp is the only protein that is gluten-free. Make sure your daughter asks to see the list that they keep the nex time she goes.

I tried a few times when I was first diagnosed, but CC is almost inevitable. The food just isn't good enough to be worth the risk (IMO, anyway).
