Why not just make your own? I buy lunchmeat at the deli counter (Boar's Head is all gluten free) and have them slice it a little thicker. Then I buy the big cheese blocks and cut them up. I read an article - I think just last month - that said most food items actually contain more than what is listed on the label. I can't remember the exact amount, but I believe it was around 10%. So is something is listed as having 100 calories, it actually has somewhere around 110, and so on. Kind of a pain in the butt, IMO. -

You can possibly reintroduce dairy later on though. My daughter was diagnosed with Celiac in January and immediately after starting the diet she became lactose sensitive. I know how you feel. I can't drink liquor anymore because of gastric bypass surgery. For whatever reason, it makes me vomit - I think maybe it's too strong? Neither of my kids who were diagnosed has ever had symptoms. The only time I know they could have been glutened is when my youngest tests her blood sugar and it is lower than 70 (she's type 1 diabetic). -
I actually bought a set of inexpensive shelves at Meijer. Five shelves, and I have it in my bedroom (really tiny apartment). You could put it in the laundry room if it's accessible from the kitchen or buy a kitchen cart and make it decorative by putting the big utensils in a couple crocks and use the drawers they came out of for additional storage.

This might seem like a silly suggestion this far in, but what temperature are the ingredients when you mix them? While cream cheese is naturally gluten free, there are some made in non-dedicated facilities, such as Philadelphia brand. I buy the Walmart brand because it does say specifically on the package that it is gluten free. I know, small consolation, but it does make me feel better. -
