  1. The diet is pretty easy. Your autistic child may benefit as well. There are many sites on line that describe the Peptide reaction autistic children with leaky guts experience. I think the Gluten-free Casein-free autistic web site is the best at describing the peptide reaction. I think it's helpful to understand gluten and the body, so I recommend...
  2. Open Original Shared Link Have you heard of "Stevia"? It's supposed to be sweeter than sugar, but not have the same effect on your body as sugar. It comes in different forms - liquid or powder- . Sorry, I haven't really researched it enough. But if you're sugar sensitive, it may be just your thing. You could get sugar free cocoa add the stevia and...
  3. Why, yes. I see that now. If you have celiac disease, you should never, ever, nevereverneverevereverever eat foods that are not organic, sugar free, msg free, dairy free, rinsed in mountain spring water, pressed dry in 100% combed cotton cloth.... and the food must be held between fingers that have been washed in antibacterial soap and rinsed while singing...
  4. Well you could adopt an all or nothing attitude and run your life that way. Everyone will be different according to when their celiac disease was caught and how they're built to begin with. Some people will HAVE to stick to a certain diet with serious restrictions - others won't. There's little need to make sugar the enemy. Gluten free donuts, cakes,...
  5. I made pumpkin pie. It was easy. I used pamela's pancake mix for the crust. Used Libby's in a can. Took about 10 minutes. The "crust" was great because it was pancakes, for heaven's sake! I made the pancakes mix thick and plopped it into the pie plate and pushed it all around with a spoon and sort of got it on the edges of the pie plate, but not really...
  6. Well, you don't have to become a health food nut just because you're dxed with celiac disease. There's plenty of junk food still available to CDers. I'm all for junk in moderation. Here's a list of all the good crap. Lays Stax Snickers bars peppermint patties hershey's kisses 3Musketeers recess pb cups Bologna *oscar mayer* Lots of Breyer...
  7. Open Original Shared Link Classico alfredo sauces *even the creamy alfredo* are gluten-free. Over rice with Chicken and a veggie.. cheap and flavorful. Bush's baked beans Emeri's new sausages. Chop, fry, toss with rice and veggies... use spaghetti sauce or Alfredo sauce. Kielbasa, sourkraut and potatoes.. with Gulden's spicey mustard. Stuffed...
  8. I read you can actually chew on them raw. Research it on line. There's lots of info on them.
  9. I did dairy free for my son at the beg. of the diet. I used oil or Pam at first...added in butter around the third month and he tolerated it. I used Lactaid milk for him for 9 months. When I tested his villi at 6 months, he had terrible stomach cramps and D. I didn't care about whey or Casein. I also wasn't as "in the know" as I am now. I'd go ahead...
  10. Are you talking about gluten sensitivity? I've read your posts b4 and get a little confused by your explanations.... PROBABLY ME.. Not saying you're a confusing person...I'm most likely the confused one! Dangerous grains authors discuss the spectrum of gluten sensitivity leading to Celiac Disease. Is this what you're talking about? Thanks. ...
  11. Young children don't usually show up positive on the Celiac tests. Please forget everything your drz have been telling you. Research Celiac disease on your own. Here at Celiac.com is a good place to start. If a person has celiac disease, the villi in the intestine atrophy to the point of no longer producing lactase enzymes...making the person lactose...
  12. Grow and grind it myself?? Let me wipe the tears from my eyes... here's the site I ordered it from: Open Original Shared Link Pricey, but lasts forever because you only need a tblsp for most recipes. They say you can use 2tblsps....but that is too much. It's great. You should get some.
  13. I have it and use it. It's great. Makes cinnamon chebe taste even better. Great with Chicken and apples..baked in apple juice with cinnamon and honey.
  14. Thanks for this. I just googled Sobe gluten free and got a link to this answer.... Celiac.com rocks.
  15. Here is the response I got back from a Franciscan on the, "Ask a Franciscan" web site. Funny, huh? I do not believe that the leadership of the Catholic church gets everything right. They make mistakes and they fix them...eventually. They'll get to this too, simply because the current decision lacks common sense at the same time it denys the very spirit...
  16. I guess it's the same problem for a nursing mom. She has to quit eating gluten if her nursing baby has celiac disease. If a mother is wise enough and cares for her baby enough to alter her diet in order to properly feed her child... doesn't it make sense that if God was containing some gluten in "Him", he'd be wise enough to feed us "himself"...nurish His...
  17. I don't have a kid I'd be willing to let travel w/out me just yet, but your propsition is interesting. I wonder if it would work better during the summer months *June-August* when school's actually out of session. Involving schools gets complicated if not working through some specific organization.
  18. Open Original Shared Link Here it is! Here's another: Open Original Shared Link
  19. Hey, I just thought of something. The U.S. has a group that does Camps for kids with Celiac Disease. I know I've read about it. I don't know where. I'll look for it. Rather than do a host family, maybe you'd feel better sending your son to a camp for Celiacs??? It's way WAY safer, I'd imagine! At least you'd be able to sleep at night!
