He came home last night and found them anyway, and decided to give them as a gift to our pharmacist (our son has some complicated medication issues and they have been great) when he went to pick up meds today. As far as goodies, we are rolling in gluten-free cookies right now! I mastered gingerbread men, peanut butter blossoms, and pecan balls so far, and...

My husband's favorite Xmas food is chocolate covered cherries-- today a neighbor left at our door homemade ones. They are exquisite in the extreme. But of course, I don't know what's actually in them besides milk chocolate and cherries. Last night, DH was so sad -- the constant barrage of buffets he can't have, explanations, etc. are wearing him. "I don't...

ARCHIVED Top 5 Naturally Gluten Free Foods
ryebaby0 replied to JessicaB's topic in Coping with Celiac Disease
Our celiacs add: 1. Klondike Bars 2. McDonald's french fries (yes, some people feel x-contam is an issues, not us though) 3. cheddar cheese 4. Tostitos 5. gala apples joanna -
My son and husband have McD french fries, burgers, and McFlurries fairly often ( probably once a month) and have never had a problem. We've had this meal from many different McD's , no problem. We are careful, though, not to eat at peak lunch, and if it's a turnpike stop I usually go in and eyeball the process. That being said, I've never met a manager who...

Obviously your grief reaction is very very normal. I agree that it will not be a finite journey, but something that is likely to subside and renew for particular occasions. It was probably 4 or 5 months after my son was diagnosed that I could even venture into the cracker aisle, and about 9 before I let him into the store at all. I can't imagine what it would...

ARCHIVED gluten-free Christmas Baking
ryebaby0 replied to skoki-mom's topic in Gluten-Free Recipes & Cooking Tips
We have a recipe for peanut butter cookies you can use to make the Hershey kiss cookies, from The Gluten-Free Kitchen (Roben Ryberg). Our favorite for cut-outs is from The Kid-Friendly Food Allergy Cookbook (Hammond). I mix 1 lb rice flour and a 5lb bag of Hagman's mix (or Bob's Red Mill) and substitute that in Joy of Cooking recipes (adding xanthan gum... -
ARCHIVED Dessert Ideas For A Company Party
ryebaby0 replied to racergirl435's topic in Gluten-Free Recipes & Cooking Tips
Our favorite fancy dessert for company is JellO instant pudding, prepared as pie filling, spooned into small individual servings. Then we take crushed cookies (save those not-perfect ones! ) --usually chocolate, and make a layer about 1/2" thick, top with fruit or just pie filling, and put CoolWhip on top and garnish with mint. It takes almost no effort and... -
ARCHIVED Need Advice For 7 Year Old Daughter With Celiac
ryebaby0 replied to Mom of celiac's topic in Parents, Friends and Loved Ones of Celiacs
Your little girl sounds very normal to me, after what she's been through. It hasn't been very long. I can't tell you what to do, only what worked for us (my son was dx at 10, after becoming critically ill and hospitalized for 2 months.) I made him index cards of okay foods and punched a hole in them, and then put them on a ring for his backpack. His teachers... -
ARCHIVED Non-celiac Spouses Please Advise
ryebaby0 replied to hapi2bgf's topic in Coping with Celiac Disease
I'm the non-celiac spouse here -- never, ever embarassed. Why would I be? There are times where it makes me sad that we can't eat out except for like 2 places (we used to have a "date" every other week for lunch, while our kids were in school) and he can only have 3 or 4 things there so WHAT's the point for him, but I've never been embarassed. And yes... -
Websites like this one and the delphi forum have great recipes that real live celiac people have eaten! But the cookbooks I use: The Gluten-Free Kitchen by Roben Ryberg (I've used it so much I bought a second copy. Some of the recipes didn't work so well with egg substitute, but it uses nice easy-to-get ingredients) The Kid-Friendly Food Allergy...

I was at Giant yesterday and there was a big display of Jello Instant pudding that was pumpkin flavored! And a recipe pad attached with directions for a cool-whip cookie-crumb pumpkin pie! I was so excited I wrote them an email, but I still will spend tomorrow turning out all these pumpkin ideas... joanna

My son's class will be doing a nutrition unit and they will be using blenders. I've already okayed all the ingredients, but do I really need to worry about the blender itself? Has anybody out there actually experienced glutenation (now there's a word) with a blender or is this one of those paranoid myths? The issue here is just the rubber gasket -- the blenders...

Thanks so much -- we do have pumpkin smoothies already, but I will try ALL these ideas (pumpkin is so good for you!). We don't have a Whole Foods here, but I keep my fingers crossed!! joanna

My son can't do eggs, either, so I'm looking for something dessert-y that has a distinct pumpkin taste. You can email me directly if you want! I tried adding some pumpkin to cooked vanilla pudding (not the instant) and that actually wasn't too awful -- but I know you guys are better cooks than I. thanks! joanna

Okay, exposing my gigantic ignorance here --- how do you make burritos? joanna

Just for fun, I wondered how you all use corn tortillas? My celiacs are living on them (it's our version of fast food) just as quesadillas (pepperoni and mozzarella) but I am thinking there has GOT to be more to do with them.....We have buttered them and spread cinnamon sugar on them; cut them into 8ths and baked them but that's been our only inspiration...

ARCHIVED Ugggh!
ryebaby0 replied to VydorScope's topic in Parents, Friends and Loved Ones of Celiacs
I think you misunderstood me; I was agreeing that caregivers ought to be educated and churches should be on top of these things -- if they are giving you excuses, you shouldn't be standing for it. It's a very simple and manageable issue if a church only decides to train staff, educate parents and take it seriously. On the other hand, somebody at some point... -
ARCHIVED Deficiencies - Doctors Appt.
ryebaby0 replied to AmandaD's topic in Coping with Celiac Disease
He said he was sure I had a calcium/magnesium or electrolyte deficiency and that I need to be on a good supplement (I'm also still nursing a baby and he said that can make the problem worse). He said that my body is probably not absorbing nutrients correctly. Well, he's absolutely right. Think of your GI system as a carpet, but the damaged glutenated... -
ARCHIVED Ugggh!
ryebaby0 replied to VydorScope's topic in Parents, Friends and Loved Ones of Celiacs
I am Christian Ed. coordinator at a medium-sized church, and I have to tell you that there's no good reason for these sorts of dumb mistakes. We don't serve snack to our kids, or allow parents to send them, unless it's a very longgggg program or runs during a typical snack time. When we do, it's veggies, fruit, water. All our children with food issues are... -
Hmmmmm..... you conceivably have a good 20 years of life left! That's a lot of damage you could do And being a weak person, myself, once it was once every 3 months, it would be once every three weeks, then three days...... Try tinkyada pasta, and you can have it ALL the time! I can't tell the difference. We feel your pain about the pizza, but homemade...

ARCHIVED Feeling Somewhat Ashamed...
ryebaby0 replied to GIJane's topic in Coping with Celiac Disease
I am not the celiac at our house, let me say that first (my son and husband were dx a year apart). Most celiacs are diagnosed after months or years of uncertainty and illness. Years of discovering that the typical faith we have in doctors we knew and loved was misguided or misplaced or simply overestimated. Months of wondering if whatever was wrong would... -
ARCHIVED Eye Swelling And Crusting--help!
ryebaby0 replied to Threebrainedbeing's topic in Coping with Celiac Disease
"I am really bummed out about this since I am turning 37 this month and am already not psyched about aging. I don't want to age before my time, too." I'm not a doctor, nor do I play one on TV, but the works-with-children part of me says maybe you have pinkeye! But your comment about turning 37 was what caught my eye: I am now 43, and when I turned... -
ARCHIVED Should I Be Worried?
ryebaby0 replied to mart's topic in Parents, Friends and Loved Ones of Celiacs
I think you want to look at any child's weight loss as a percentage of their "normal" weight -- i.e., if your child is typically at the 50th, at 40 pounds, and then loses 4 pounds that might not seem like much until you think of it as 10% of their weight. Fluctuations of a pound or so are normal for most kids and I would only worry about a downward trend... -
ARCHIVED How Were You Diagnosed?
ryebaby0 replied to krisb's topic in Post Diagnosis, Recovery & Treatment of Celiac Disease
My son was dx via hugely positive bloodwork and positive endoscopy following months of illness, but did not respond to the gluten-free diet fast enough and was eventually hospitalized. He has been on immunsuppressants for almost 2 years now, and may have a rare condition I won't bore you with, or he may just be a hard-to-resolve case, or have refractory... -
ARCHIVED Newly Diagnosed 14 Year Old
ryebaby0 replied to momofbll's topic in Parents, Friends and Loved Ones of Celiacs
It's really hard to get the hang of this at first! Hang in there! You might want to limit the amount of information you try to read at first -- there's just sooo much. Try reading some of the "what do you eat for lunch" threads to get some good ideas, but don't over read! Make up two or three "menus" i.e. meals that are gluten-free. It will give you...
