    I know that there are a lot of posts on here to the contrary, and that doctors are sometimes wrong, but every scientific source I've read indicates that gluten must be ingested for it to cause a problem.     ncdave, do please visit a doctor to review any vitamin deficiencies, but please also note that iodine is added to salt for a reason - it is essential for the human body to process thyroid hormones.     Thanks again, everyone. I heard back from my GI's nurse last week, the biopsies came back positive for celiac. After a couple of attempts, I have been gluten-free for about a week, and I've seen some positive changes, but some surprising not-so-good ones too, which I assume will resolve themselves.
