Thank you. I wrote everything down on the print out. I hope to try these this next week. They sound so yummy. I am going to use Spectrum shortening in place of butter. I use the Spectrum in my choc. chip cookies. Hopefully these will turn out without the butter.

What are the portions of each of the flours used? And how much xanthan gum. So far I only use mixes for my baking (except choc. chip cookies). So, I am also like Dingo Girl, I need explicit directions. And I would use an egg as I have no egg replacer.

I hope you decide to go completely gluten-free. There is not just a little gluten-free. You might find yourself with some auto-immune diseases that you do not want, somewhere later in life. You really need to see your Mom and make sure that she is at least getting enough fluids. The last month before my diagnosis I would not let my family visit as I did not want anyone to see how bad I had become. If I get a new RX, I either email the manufactor or I call them. The problem I have had with generic is that sometimes the drug manufacture will not even answer my email. If you had the test done, please keep in mind that you can have a false negative, but not a false positive. Some doctors do not totally accept the blood test, even if it is positive and insist you have the biopsy done. But, that is sometimes iffy. They have to take 8 to 10 from the right areas to get a Celiac diagnosis. And there are some doctors who... -
Lets say that you want to make up a large amount of her flour to freeze so that you have some on hand at all times. The flour that says 2 parts would be 2 cups flour. The one parts would be 1 cup each. For a combined value of 4 cups. Each part is one cup. You can reduce the parts to what you are needing. I hope I did not confuse you more .

Have you cut out ALL gluten or just wheat. Have you checked for any possible cross contamination. That means your toaster, your lipstick, condiments that have been double dipped (gluten used knife stuck in jelly, etc.), shampoos that might get in your mouth. Things of that nature. I am sure that other's will post that might have more ideas then I do.... -

Your pins and needles and numbness, could be periphial neuropathy. I said could be. I got diagnosed at age 63 and so mine seems to be here for good. When I got diagnosed in 2/04, I had no idea what Celiac was and had to learn about it via the internet. I think it was about April of that year that I found Scott's site and signed up for his newsletter. I had scrolled down through the list on the left and saw Message Board, but since I was certainly computer illiterate, I thought it was just a chat room...

I also wanted to welcome you to the forum. You cannot just go a little gluten-free, but must go gluten-free all the way, which means to try and not have any cross contamination. Any amount of gluten will keep your small intestine from completely healing and could impact your health in some powerful ways, further on in your life. Also, yes, after you... -

I have very dry eyes and use a RX in them twice daily. If I stop taking the drops for a couple of days, my vision gets very blurry, which I assume is because of the dry eyes. I don't think I can add much to what everyone else has posted. But you can have a false negative on the blood test. You can never have a false positive. Also the biopsy can be hit and miss, depending on how bad the damage is in the small intestine. Your doctor needs to take 8 tp 10 biopsies from different areas. As everyone stated, you can not change your genes and that is what makes you a Celiac or gluten intolerent. By being totally gluten free with no cross contamination on a regular basis, then yes, your body can heal. But, never enough to reintroduce gluten into your diet. If you ingest just a little bit of gluten, it takes your small intestine 3 to 4 weeks...
