ARCHIVED My Husband Is The Problem Help
happygirl replied to a topic in Parents, Friends and Loved Ones of Celiacs
That is probably true-it is hard to understand how something so "normal" as wheat, etc., can be so damaging. Logic says that just a "little" cheating here and there isn't too bad....but for Celiacs, as you know, that is just simply not the case. That was a question that was asked of me a lot at the beginning, "Well, can't you just have a little bit of this... -
I agree with Jen-it is nice to hear how the pregnant ladies are doing! I don't have kids yet (married 1.5 years) and its not on the near horizon, but something that we are talking about ..... so its nice to learn ahead of time! I really think that Celiac pregnant women are amazing-no "normal" crackers, bread, pretzels etc when you are not feeling well...

LisaB- Did you try clicking on the links that I posted above for the fast foods/restaurants? They should take you either directly to the page or to a page that links you to it. Some are PDF (Adobe Acrobat) files and some are just on the webpages. Once you are at the desired page, you can go to the top of your internet screen, click on "Favorites," click...

ARCHIVED gluten-free Christmas Baking
happygirl replied to skoki-mom's topic in Gluten-Free Recipes & Cooking Tips
Peanut Butter Blossoms: 1/2 cup shortening 1/2 cup peanut butter (I probably used a little bit more-love PB!) 1/2 cup granulated sugar 1/2 cup packed brown sugar 1 teaspoon baking powder 1/8 teaspoon baking soda 1 egg 2 tablespoons milk 1 teaspoon vanilla 1-3/4 cup all-purpose flour (I directly substituted Bob's Red... -
I'm so jealous, Deb and Viola! I want a good McDonald's! The McDonald's that I used to go to in Auburn (ordering french fries) would continually make me sick-finally had to cut it out. I tried one on vacation in Nags Head this summer-got sick. Now I'm in VaBeach and I'm too scared to eat their fries----and I miss them terribly! Next time you eat a fry...

ARCHIVED gluten-free Christmas Baking
happygirl replied to skoki-mom's topic in Gluten-Free Recipes & Cooking Tips
Funny you should ask about the peanut butter blossoms---I just made two batches about a week ago. And they turned out GREAT! I adapted it straight from the Better Homes and Garden cookbook. I used to love those cookies so I just substituted Bob's Red Mill gluten-free flour (love that stuff). If you want me to post the recipe-just let me know. My mom... -
This past spring, we had a Johnny Carino's open RIGHT down the street from us in Auburn, Alabama. I emailed corporate and the response I got back was that I would not have very many options at all-a plain salad w/no dressing, and maybe a unmarinated chicken breast, but I don't remember. I never went to eat there so I don't have anything more to tell you...

ARCHIVED What To Cook For Turkey Day?
happygirl replied to racergirl435's topic in Gluten-Free Recipes & Cooking Tips
I will gladly share it. I just finished another slice for lunch and brought it for two of my friends (non-Celiac) and they loved it. The only adjustments I had to make were for the crust. Crust: 1 ½ cups graham cracker crums (instead, I used Pamela's pecan shortbread cookies crushed up) 3 Tablespoons sugar 3 Tablespoons butter, melted Filling:... -
ARCHIVED What To Cook For Turkey Day?
happygirl replied to racergirl435's topic in Gluten-Free Recipes & Cooking Tips
Thanks jerseyangel! I must say, I am rather proud of myself. Last year, I didn't cook for Thanksgiving but did a turkey w/a not-so-good cornbread dressing (last year was my 1st gluten-free events). Wasn't bad, but wasn't great. Last year's gravy wasn't great either. Over the course of the year (thanks to education and having more time now that I... -
I had originally been contacted, had been approved, blah blah blah....but talking w/one of the people involved in the study, turns out I can't participate bc of issues w/my biopsy. But good luck to those who do!

ARCHIVED What To Cook For Turkey Day?
happygirl replied to racergirl435's topic in Gluten-Free Recipes & Cooking Tips
We did "our" Thanksgiving yesterday as my husband works on Thanksgiving but was off on Tuesday. So his parents and grandparents came over and I cooked for everyone. Here was my menu-and it was a big hit-almost completely gluten free! 1. Roasted Turkey 2. Mashed Potatoes 3. Gluten free homemade gravy---made w/turkey drippings, a bit of water, and... -
ARCHIVED Meal Ideas For Someone Broke Severe Fatigue

I've never heard that citric acid is not allowed. Someone correct me if I am wrong. On this board, CF usually refers to "casein-free" which is found in milk and other products. -
ARCHIVED How About Oats?

I have heard that those (McCanns) are the only ones that are guranteed to be gluten free/non-contimated. But don't know if thats true. -

I also love the Reynold's bags! This is only my second turkey to make, but my first turkey was great, and they are what my mom uses, too. You could make a small turkey in the bag, and then use the leftovers to make turkey soup and freeze it! -
ARCHIVED Please Help Asap !
happygirl replied to Judyin Philly's topic in Gluten-Free Foods, Products, Shopping & Medications
Judy, I'm sorry you are not feeling well and are struggling. I've read others' responses and hopefully they can provide you with some insight. I don't know much about other food allergy/intolerances, but here is what I thought of: I remember after going gluten-free, that I still felt sick a lot after meals. I think it was because my intestines were... -
ARCHIVED Is A Tiny Amount As Evil As A Pizza?
happygirl replied to Random Guy's topic in Coping with Celiac Disease
I like the analogy of being pregnant as it relates to Celiac. You either have Celiac (or gluten sensitivity, etc.) or you don't. You are either pregnant or not. There is no a "little bit" Celiac or a "little bit" pregnant. You might have different symptoms, but the reaction, or the pregnancy, is still happening. -
I know that people use different types of stuffing....you could make a normal cornbread stuffing (there are regularly gluten free cornbread recipes) and then there would be no risk of contamination. Just a thought. If I am doing the cooking, it is gluten free. Tell him you'll make YOUR turkey w/gluten-free cornbread stuffing and he can make his own little...
