    The drug doesn't work by "stopping" GI symptoms, it works by not allowing gluten to cross the barrier cells that cause it to be in a place where the autoimmune reaction occurs. It covers all symptoms because it stops the autoimmune reaction from occurring in the first place.

    Wheat is required by law to be listed and cannot be hidden. Generally, rye, barley, malt, and oats will be listed, but they are not quite as mandated as wheat is.     Have you contacted a local support group to find a doctor that they recommend? While they may not be able to 100% guide you through it, you may feel more comfortable with a more experienced Celiac doctor.

    Gluten free means avoiding all Wheat, Rye, Barley, Malt, and Oats. Any bread that is served at a restaurant/fast food place is made from wheat (unless specifically stated not to). Nothing with bread at Quiznos is safe. I don't know about the meat, etc. at Quiznos...however, even if ingredients are safe, you would need to be careful of cross contamination...

    You could also use a pre-mixed gluten free flour blend (Bob's Red Mill, Arrowhead Mills, etc.)

    I've been there just a few times, but my mom is there fairly often to get treats for me. I like to think I know my gluten free foods, and they certainly have it covered! Great family-happy to support them.

    In the US, maltodextrin is generally not a concern. It is almost always derived from corn. In the rare instances where it is derived from wheat, it must be clearly stated....Maltodextrin (wheat). What is the name of the company? Certain companies have policies of not hiding any gluten.
