Can you provide a bit more info like: Which blood tests indicated Celiac? Which inflammatory bowel disease did he diagnose you with? Often Crohn's or Ulcerative Colitis Did the doctor take multiple biopsies or only one? -

Many Celiacs have jobs that require a good amount of travel. It is certainly not impossible. You can get an inexpensive toaster oven that can easily fit in a suitcase to take with you on trips when you can't stay at a place with a microwave/small kitchen. That should help with the travel. -

He could have Celiac, or he could not have Celiac and have gluten as one of his trigger foods. A great resource for eosinophillic disorders is www.apfed.org Many of Enjoy Life foods are allergy free, including corn. Best of luck. -

If you stick to a strict gluten free diet, yes, chances are your villi will return to normal much closer to "months" than "years." Not to say that it doesn't take longer for some. Progresso Creamy Mushroom Soup is gluten free. Lipton Onion Soup Mix is gluten free. Many of McCormick's seasoning packets are safe. I believe the Mild Taco, Hot Taco, Taco, 30% Less Sodium Taco, and Chicken Taco are all safe. The Cheesy Chicken taco is not. Whole Foods generally carries a lot of Bob's Red Mill products. I rarely use any other flours...I just use their mixture. Makes it a lot easier. They also generally carry a lot of Tinkyada pasta. It might indicate two things: that you have Celiac Disease or that you have a gluten intolerance. The IgG antigliadin test, while not as great as the others, is STILL included in the panel, so there is some diagnostic help provided in it. I personally don't think going to the GI is a waste of time because they may be able to identify other potential problems... -

re: cube steak. flour it and fry it. just use a gluten-free flour....like bob's red mill. make gravy the same way...with gluten free flour. Have you found Tinkyada pasta yet? Its delicious. Substitute it and make "normal" meals. Spaghetti, mac and cheese, etc. I've never seen a baking powder/soda that isn't gluten free. List the ingredients and... -

I've never seen a ketchup that has gluten in it! All companies are now required to list wheat, by law. By law, any wheat is required to be listed. That leaves rye, barley, malt, and oats, which to me, are not often used in a product like sausage. Personally, I'd eat it. -

Many people who can't tolerate soy (including true soy allergies) can tolerate soy lechitin. That's probably why its listed like that. Hopefully someone else will pop in with a suggestion. -

McCormick's is a GREAT company that has a policy of clearly listing any gluten ingredients, so it wouldn't be hidden in caramel coloring, natural flavoring,----all that stuff. If its not on there, its not in there -
